I love a good thick, homemade soup.

 

Today, I made soup from scratch with butternut squash, sweet potato, carrots, celery, courgettes and leeks.

 

Shredded two chicken fillets to go in the soup.

 

 

This is now my new favourite thing I've discovered since cauliflower rice!!!

 

Lots left over so easy peasy throughout the week, all I'll have to do is cook some chicken and I'll be good to go.

I literally just chopped up all the above ingredients, simmered them with some hot water in a pan for about 20/30 minutes, blended them in a food processor, cooked the chicken fillets and shredded them with two forks :)
