Sweet potato peel...

It seems I've read many times about peeling sweet potatoes, "eating them out of the skin", etc.  I'm buying only organic because I know potatoes contain the greatest amount of insecticide. I like the skin and it has additional fiber, so do I have to discard it?

If the skins are clean and healthy looking, should be okay to eat them if you love them.

 

If they have mold or funny patches, may be best to peel them. Mold contaminated ones don't become totally clean with cooking (about 40% reduction when baked), and in places where contamination is common, they are always peeled.
