AndromedaRN Posted May 4, 2014 Share Posted May 4, 2014 It seems I've read many times about peeling sweet potatoes, "eating them out of the skin", etc. I'm buying only organic because I know potatoes contain the greatest amount of insecticide. praxisproject Posted May 4, 2014 Share Posted May 4, 2014 If the skins are clean and healthy looking, should be okay to eat them if you love them. If they have mold or funny patches, may be best to peel them. Mold contaminated ones don't become totally clean with cooking (about 40% reduction when baked), and in places where contamination is common, they are always peeled.
