INGREDIENTS: EXPELLER PRESSED VEGETABLE OIL (CANOLA, SOY, AND/OR SUNFLOWER), APPLE CIDER VINEGAR, SOY SAUCE (WATER, SOYBEANS, WHEAT, SALT), WATER, EXPELLER PRESSED TOASTED SESAME OIL, TOASTED SESAME SEEDS, SHIITAKE MUSHROOMS, XANTHAN GUM. Just replace noncompliant ingredients with compliant ones and skip the hard to find gum and you're good! I haven't had this dressing before so I wouldn't be sure of the proportions, but ingredients are listed in order of what it has more of. So mostly olive oil, then vinegar...standard enough. The rest of the ingredients are for adding flavor. I'd imagine the water is used to soak or extract the flavor from the mushrooms...unless this dressing has actual pieces of mushroom in it? In which case, you could probably just make a day ahead to let the flavor infuse.
