robynlo77 Posted May 20, 2014 Share Posted May 20, 2014 I mashed 1 avacado, added olives, red onion and cashews (I roasted them). Mixed that together with some left over crock pot chicken breast I had from yesterday. Topped it all with a little evoo and vinegar for "dressing"....put all of this on top of huge plate of spinach, it was so simple and delicious!
