AprilW Posted October 7, 2014 Share Posted October 7, 2014 i just tried my first batch of mayo and it was terrible! the consistency come out nice, it was very stiff, but the flavor was terrible. i think my olive oil has gone rancid because all i could taste was stale oil. I might try again but maybe with a different oil. Tried this again with fresh oil and 100% difference. This was so good! I did notice that after a day the mayo split apart again. Any longer and I do see the oil start to come out of the dredges at the bottom of the jar. I also noticed that I had to find the right spot in my fridge to keep it, too warm a spot and it seperates and too cold a spot and it almost freezes which is gross.
