LuiseRN
Does anyone have any good ideas about portable veggies? Sometimes food is provided when I work at different offices. Normally they will ask me and I will order a dry cooked steak or some other compliant meat. The problem is that it is hard to get compliant veggies so I normally bring my own. Any ideas about packing veggies besides raw carrots and celery and salad greens (which I've been doing)? I like variety. Raw broccoli is a little bit problematic (I worry about the green bits getting into my teeth haha). What about a dip? Any recipes for a veggie dip? Moderators ultrarunnergirl Posted May 21, 2014 Moderators Share Posted May 21, 2014 Luise! Get yourself the Well Fed cookbook, stat! Holy moly, the sauce/dip recipes are worth the price alone. Check her website for some sauce recipes she has posted. My favorites: Sunshine Sauce - it's like peanut sauce only MORE delicious! Baba Ghanoush - You'll wonder why you ever ate boring old hummus. Smoky good! Spicy Secret Sauce - made out of homemade mayo, coconut aminos, sesame oil, cayenne, garlic and more, can be drizzled or dipped. It's Hubz' favorite. She has a ton more in Well Fed 2. My go to dippers when I get tired of baby carrots and broccoli are sugar snap peas, jicama, and red bell pepper strips.
Moderators ShannonM816 Posted May 21, 2014 Moderators Share Posted May 21, 2014 How do you feel about cold cooked veggies? I don't mind roasted sweet potatoes cold, so that might be an option. I made this broccoli salad for a potluck, and it was good, although finding compliant raisins may be difficult (I'm not currently doing a W30, so I just bought the ones I could find at the grocery store) If you do find compliant raisins, a simple carrot-raisin salad might be good -- shredded carrots, mayo, and raisins at its simplest, I've also seen it with either apples or pineapple chunks, and sometimes seasoned with ginger or cinnamon. Coleslaw is good. I've been meaning to try this Belly Dance Beet Salad and this Citrusy Carrot & Radish salad, but haven't yet. Soups? You could keep them hot in a thermos, or go with chilled ones like these: http://whole9life.com/2012/07/summer-soups/

kelseymae
Now you have me wondering about compliant raisins..... The ingredients are just seedless raisins/grapes? Not covered in Raisin Bran sugar, wouldn't they be ok?

Not covered in Raisin Bran sugar, wouldn't they be ok? Theoretically, raisins should just be dried grapes with nothing added, but the ones I picked up at the grocery store for this recipe listed sulfur dioxide (sulfites) -- and sulfites are not allowed. I know I've seen other dried fruit at Sprouts and Whole Foods labeled sulfite-free, so I'm assuming it's possible to find them without sulfites. I would also read labels and be sure there's no added sugar, since it seems to show up in everything.
kelseymae
The ones I have just say seedless grapes as the ingredient - I will check for sulfer. Thanks!
