rhubarb

Got some rhubarb in my CSA box this week. Last year I made crisp with a ton of sugar and butter and oats because that stuff is sour! No idea what to make with it now. I'm done my whole 30 so I can use honey but prefer not to use table sugar.

Combine it with applesauce or cook down with some apples (sweeter variety) to make some sauce.  If that isn't sweet enough, try some 100% apple juice concentrate.  I use it to top pork.  I can't find it right now, but I have a recipe for a sauce for meat that includes rhubarb and balsamic vinegar and other stuff.

 

You can do it with strawberries and even something like dates.

 

I saw a paleo recipe for rhubarb salsa, but pretty sure it had a little honey. 

 

It is still sugar, but not processed sugar.  

 

I have not tried this, but uses so little sugar you can probably omit or sub a couple of dates or apricots:

I ended up baking it into a sauce using apple juice and used it to dip my roast chicken and also mixed it in with a can of tuna. Very good, next time no need for apple juice, it tasted too sweet and would be fine as a sour sauce paired with meat. It tasted kind of like cranberry sauce!
