We specifically say we don't want you drinking juice and the concept applies to nut milk too. The idea with nut milk or juice is that it be used to flavor or enhance the qualities of other foods. Nut milk does count as a fat. It would digest more easily than eating whole nuts, but you would be missing a lot of the nutrition and fiber from the nuts when consuming just the milk.
