haleymathews Posted June 2, 2014 Share Posted June 2, 2014 Today is the first day of my first whole30! I whipped up a bunch of stuff in the kitchen last night and am ready to go! Day 1 Breakfast 2 scrambled eggs with spinach and mushrooms sautéed in a tablespoon of extra virgin olive oil Lunch Chocolate Chili and two cups of broccoli sautéed with cumin, coconut oil, and less than a handful of chopped almonds Dinner Snacked on homemade brussels sprouts chips while I made seared turkey breast with sautéed kale, yellow bell pepper, and mushrooms. Ate a palm-sized portion of the turkey and filled my plate with the sautéed veggies and roasted brussels sprouts. Day 2 I feel good! Last night I slept from about 1 AM to 8:30 (I'm a night owl and a college student) and I'm a little sleepy. I've seen others add their meal times to their logs, so I'll start doing that today. Breakfast 9:15 2 scrambled eggs with leftover sautéed kale, yellow bell pepper, and mushrooms and half an avocado. The kale was a little hard to stomach in the morning, and I felt a little funky afterwards. Lunch 12:30 I made homemade mayo and mixed six tablespoons of it with a can of compliant tuna and chopped celery, onions, curry powder and garlic powder. I ate 3 cabbage leaves with the tuna salad inside and two closed handfuls of carrots and raw mushrooms. I'm wondering if this is too big of a meal for lunch--I was pretty hungry and it seems like a can of tuna is a normal amount, but I wasn't sure. Dinner 7:30 Made the brined chicken that's on theclothesmakethegirl's blog, which was YUMMY. Lots of different spices and the brining made it so moist. Sauteed two cups of spaghetti squash and two big handfuls of spinach in two tablespoons of coconut oil. I made the Moroccan dipping sauce from theclothesmakethegirl and dipped all of the above in it. haleymathews Posted June 5, 2014 Author Share Posted June 5, 2014 Day 3 Breakfast, 9:45 Accidentally overslept this morning, so I quickly scrambled two eggs and heated up a palm-sized portion of the chicken last night and ate it on the way to class. No veggies though… oops. Lunch, 12:30 CHIPOTLE! I am a chipotle addict and was so relieved to find out that I could still go there!! Had to change up my order a little, but that's okay. I got a salad with carnitas, medium salsa, pico de gallo, and guacamole. So good. Should've doubled up on the meat--I'll be sure to do that next time. Dinner, 9:00 I went straight to 5:15 hot yoga after work, so I didn't get to dinner until pretty late. Luckily I'm a night owl so I won't be going to bed for at least a few hours. Right when I got home from yoga, I had a few bites of chili, for lack of any clue about what to eat post workout. I couldn't stomach the thought of eating squash right after excreting my body weight in sweat, so I thought beef would be a pretty good protein source. But like I said, I only had a few bites. I felt bad about my lack of veggies at breakfast, so I ate a salad with a handful of spinach, two sliced tomatoes, and half an avocado with garlic salt and more Moroccan oil dipping sauce while dinner was cooking. I had a palm-sized portion of the turkey breast from day 1, and filled the rest of my plate with a ton of roasted broccoli and brussels sprouts. I don't know if it's from hot yoga, eating like this, or both, but I'm feeling really good! Haven't hit that "hangover" feeling yet… I'm nervous for when it will hit! I think I'm headed to Chipotle myself for lunch today, so my order will look very similar to yours, haha. You know...I've never been to a yoga class. My friends who go LOVE it. Day 4 Breakfast, 9:40 Scrambled two eggs and made hash browns with 2 cups of spaghetti squash. I was quite proud of myself because they turned out really yummy. Sauteed them in a tablespoon of coconut oil. Lunch, 12:30 Ate my homemade tuna salad in cabbage leaves--3 to be exact. And made a big spinach salad with chopped jicama and tomatoes. And had a small handful of raw carrots. Dinner, 8:15 Rubbed tilapia with a bunch of spices, some lemon juice and olive oil, and baked it. Had about 1 1/2 palms-sized of the tilapia on top of a bed of sautéed spinach, chopped onions, and mushrooms. Sauteed those in two tablespoons of coconut oil. I put a ton of spinach in the pan, but it always wilts down so much! It was a good dinner. I'm still feeling good today. I took a nap after I got off work because I'm not going to bed early enough, which is probably the most important habit I need to break. Link to comment Share on other sites More sharing options...

Lunch, 12:20 Chipotle again! Double carnitas this time, lots of lettuce, medium salsa, pico, and guacamole. Dinner, 8:00 Palm sized portion of the tilapia from last night and filled the rest of my plate with roasted brussels sprouts and broccoli. I'm a little hungry right now, and I only ate dinner an hour ago. I think I'm going to have a tablespoon of almond butter with some carrots and see how that does. The weekend starts tomorrow, so we will see how easy or hard it is! Update: had a tablespoon of almond butter and three small celery sticks at 11:30. I held out as long as I could! haleymathews Posted June 8, 2014 Author Share Posted June 8, 2014 Day 6 Wow! I am 20% done with my whole30 and it doesn't feel like it has taken much effort at all. Besides the one time I had to watch my roommates chow down on gourmet cheeseburgers, it hasn't been too bad. Today was a kinda crazy day for me eating-wise. I woke up around 12:30 (I know, I know… but it's my sleep in day!!) and ate breakfast around 1. Then I went to the pool with some friends and didn't get back home until about 5:30, when I showered and waited for my roommate to be done with the kitchen, which put dinner at about 7:45. So I only had two meals today--but they were both pretty big, and I might snack on some brussels sprouts chips later or something. Breakfast, 1:00 Three scrambled eggs with two compliant sausage links, mushrooms, onions, all sautéed in a tablespoon of coconut oil with half an avocado diced on top and a whole tomato diced on top. I ate about half of the scramble and put the rest in the fridge. Salad, 7:00 Had half an avocado diced with a whole sliced tomato with Moroccan dipping sauce. Dinner, 7:45 Heated up the tilapia from Day 4 and ate it on a bed of sautéed mushrooms, onions, garlic, spinach, and zucchini. Also sautéed a good amount of spaghetti squash till it was crisp and brown and ate that too! Back to reality tomorrow with a math test in the morning and another afternoon at work. Breakfast, 12:30 Ate the rest of the leftover scrambled eggs with mushrooms, onions, and spinach from yesterday, mixed with three newly scrambled eggs and bell peppers (of which I ate about half). I also drank a cup of coffee with coconut milk. I hit the library from about 1:30-6:30, after which I ran to the grocery store and home to whip up dinner before I went to see The Fault in Our Stars!! (SO GOOD. so sad.) I snacked on three celery sticks with a tablespoon of almond butter between them to hold me over between meals, seeing as I wouldn't have time for lunch. Dinner, 7:30 The rest of the tilapia from Day 4 on a bed of sautéed mushrooms, onions, zucchini, and a ton of spinach. All sautéed in a tablespoon of coconut oil! I had to wake up early to get to my professor's office hours for my test today, so breakfast was a little earlier! I went to hot yoga again, I always feel great after that class. I think I'm going to start going M W F. Breakfast, 9:00 I scrambled three eggs with mushrooms and onions for breakfast and ate it on the way to class. I had half an avocado diced on top. I also had coffee with some coconut milk. Lunch, 12:15 For lunch I had my homemade tuna salad in three cabbage leaves with carrots and celery in the salad, in addition to a spinach salad with a whole tomato chopped on top. Dinner, 7:35 For dinner I made nomnompaleo's Thai curry chicken which was SO easy to make!! And it was delicious. Like, I might have to have it for breakfast tomorrow. …just kidding. Lunch though, for sure! I'm up pretty late right now prepping some food for the week since I didn't get a chance to yesterday. Until tomorrow! I took a two hour nap today after work so hopefully I will be able to get to bed at a decent time tonight! Breakfast, 9:30 A bowl of zucchini soup and diced chicken. Lunch, 12:20 The rest of my Thai chicken curry from last night and 2 cups of spaghetti squash sautéed in coconut butter until crispy. Dinner, 8:50 Baked Salmon rubbed with olive oil, dried basil, a little lime juice, garlic salt, and pepper. Ate a palm-sized portion of that and filled the rest of my plate with roasted brussels sprouts, broccoli, and asparagus. I had a bowl of zucchini soup while everything was cooking! I started getting cravings for the first time… I wanted a little bit of chocolate, and REALLY wanted some rice at chipotle… And I still do! I think this is the start of a hard phase for me in my whole 30 but I'm ready for it! Breakfast, 9:40 Sauteed mushrooms and bell peppers with a compliant sausage link. I ate this on the way to class and didn't finish it all, but I made sure I ate all the sausage and as many veggies as I could. Veggies were sautéed with a tablespoon of coconut oil, Lunch, 1:00 I had a whole sliced tomato, a big handful of spinach, and half an avocado topped with moroccan dipping sauce while my salmon from last night was heating up. I also had a little bit of zucchini soup. Dinner, 7:30 Chipotle bowl! Double carnitas, lots of lettuce, lots of pico, medium salsa, and guacamole. I woke up late, spilled hot oil on myself while making breakfast, and endured an hour and a half class with throbbing fingers as a result. Then by lunchtime, I was nauseous and the thought of sautéed anything grossed me out, and I didn't have time to whip up any new meats or anything, so I ate what I had left of my zucchini soup. This was a mistake. I was so hungry by about three o'clock that I was having mood swings and craving everything I saw. As I'm typing this, I feel significantly better because I had a good dinner. I knew that eating that little for lunch was a poor choice, and I definitely suffered the consequences. I've spent tonight prepping for this weekend, when I will be going to San Antonio and staying in a hotel--wish me luck! Breakfast, 9:40 Three scrambled eggs and spaghetti squash hash browns Lunch, 12:20 Small bowl of zucchini soup Dinner, 5:45/6ish .62 lbs of ground beef browned with chopped onion, diced tomato, and taco seasonings on top of a BUNCH of spinach and romaine lettuce, topped with HEB guacamole (compliant), salsa, and more chopped tomato and onion. Lunch, 1:00 Blackened chicken breast, rest of the plate filled with brussels sprouts and asparagus, and some zucchini soup. Between lunch and dinner I drove from College Station to San Antonio, so I was a little hungry when i finally got to SA. I had a small pack of olives and a Larabar (emergency food--I was about to eat the nachos from the bar at the hotel) Dinner, 9:00 Dinner out at a Mexican restaurant in San Antonio--the beef and veggies from a fajita plate with extra guacamole. Breakfast, 9:00 One hard boiled egg… For a pre workout snack! Did 40 minutes of cardio and then some abs. Lunch, 1:30 Tuna salad on a cabbage leaf and I just finished the rest with a fork, and several cherries and strawberries. Dinner, 9:00 Went out for dinner, so I got shrimp lettuce wraps and ice water. Day 14 Breakfast, 10:15 A few shrimp, cherries, strawberries, olives and two boiled eggs. Lunch Well, I ended up leaving San Antonio around noon to head back to College Station, so I didn't get a full lunch in. On the three hour drive home, I ate a hard boiled egg, olives, and a Lara bar. Lunch, 12:30 Tuna salad and a spinach salad with a tomato sliced on top and balsamic vinegar and olive oil drizzled over. Added spinach to my tuna salad when I realized that was a good combo! Dinner, 7:00 Palm-sized portion of tilapia that I rubbed with olive oil, garlic salt, pepper, and thyme before I baked it and a sweet potato stuffed with sautéed mushrooms and spinach. I snacked on jicama dipped in guacamole while dinner was cooking. I'm also sipping on a cup of coffee with coconut milk because I'm so damn tired and I still have to study for my math test. Accompanied by a black cup of coffee. Lunch: Tuna salad and zuchinni soup. Dinner: Leftover tilapia on a bed of sautéed zucchini, spinach, and mushrooms. Day 17 Breakfast, 9:45 Made three scrambled eggs and spaghetti squash hash browns, but upon starting to eat them, I got so nauseous I could only have a few bites. I'm even getting nauseous now thinking about it. Lunch, 12:00 Chipotle! Carnitas with pico, medium salsa, lots of lettuce, and guac. Went to hot yoga right after work- love!! Dinner, 7:00 Palm sized portion of baked salmon and a spinach and sprouts salad with moroccan dipping sauce and a chopped up tomato. I had a little bit of guac along with the salad. Does anyone have any feedback? I really am not feeling that different, and I don't think I've lost any weight. Can't be sure, because I haven't checked the scale! I had a crazy weekend with a bunch of friends in town, and I can't possibly remember what all I've consumed. But I will continue on with today! Day 22 Breakfast: Uh.....none:(( I was running late and didn't have any food in the fridge. I'm the worst, I know. Lunch Egg salad (made with homemade mayo) on top of spinach and while the eggs were boiling I ate a sweet potato with sautéed mushrooms and spinach. I snacked on cherries at the office and after work went to the gym and did cardio, lunges, push ups, and planks. Dinner SHAKSHUKA! I was so excited about making this middle eastern dish and it turned out so yummy. Here's a link to the NYTimes recipe I followed, minus the feta and plus a jalapeño and spinach! This morning I ate two boiled eggs and some blackberries and cherries. Lunch A little bit of egg salad and a spinach salad with mushrooms, boiled egg on top, and moroccan dipping sauce dressing. Ate some guac too. Lunch, 12:15 Tuna salad on a bed of spinach. Cherries and blackberries. Dinner, 6:30 Blackened spicy salmon on a bed of sautéed veggies. Ran 3 miles around 9 o'clock.
