I counted it as my starchy today because I made it into little pancakes (spaghetti squash, egg, onion, coconut flour, salt), but I don't know if it really has enough calories and carbs to count as a starchy veg normally. My squash, egg, and onion cakes, shmeared with roasted garlic and served alongside chicken and 40 cloves and sauteed chard, clearly do not qualify as SWYPO breakfast fodder. Yup, I agree with CaGirl and the OP, this is akin to egg foo young which is on the ClothesThatMakeTheGirl.com website (and in the Well Fed cookbook) and is Whole30 approved. Nice job also on making this part of a recommended template meal, Mads. I've never even seen that recipe before, ha. It's from a Mollie Katzen cookbook, "The Vegetable Dishes I Can't Live Without" -- I just replaced the wheat flour with coconut. I figure... you can't get too hung up on the shape of the food.
