Spaghetti Squash: Starchy?

Does spaghetti squash count as a starchy or non-starchy vegetable? I counted it as my starchy today because I made it into little pancakes (spaghetti squash, egg, onion, coconut flour, salt), but I don't know if it really has enough calories and carbs to count as a starchy veg normally.

As starchy veggies go, they're on the lower end of the scale of carb content. But you should avoid making pancakes if you're on Whole30 (see "Pancakes" in this "Can I Have..." article.)

 

Okay, come on... did you read the ingredient list?  My squash, egg, and onion cakes, shmeared with roasted garlic and served alongside chicken and 40 cloves and sauteed chard, clearly do not qualify as SWYPO breakfast fodder.  :)

You mean because it's savory rather than sweet? Hmmm... that is interesting. I actually don't know if that makes a difference. Mods?

 

Yup, I agree with CaGirl and the OP, this is akin to egg foo young which is on the ClothesThatMakeTheGirl.com website (and in the Well Fed cookbook) and is Whole30 approved. 

 

Nice job also on making this part of a recommended template meal, Mads.

I've never even seen that recipe before, ha. It's from a Mollie Katzen cookbook, "The Vegetable Dishes I Can't Live Without" -- I just replaced the wheat flour with coconut.

 

I figure... you can't get too hung up on the shape of the food. After all we don't forbid meatloaf just because it's the shape of bread!
