I made this last night and it was wonderful; so I would like to share:


1 onion, chopped

1 stalk celery, chopped

1T Olive oil

1-28oz. can diced tomatoes

1T snipped parsley

1/2 t. lemon juice

1/4 t. salt

1/4 t. dried thyme leaves

1/8 t. dried oregano leaves

1 clove garlic, chopped fine

1 bay leaf

Dash of cayenne pepper

2-10.3/4 oz. chicken broth (used my own homemade broth)

1/2 C. Water

1# frozen cod cut into 1 inch pieces (I used Flounder, had no Cod)


Cook onion celery, garlic in oil until tender.  Stir in tomatoes(with liquid), parsley, lemon juice, salt and spices.  Boil, then reduce to simmer.  Stir in broth and water, add Cod.  Simmer 10 mins.
