I had my heart set on some Jeni's ice cream for my dairy reintro, but they all seem to contain tapioca starch and/or syrup and I was planning to try not to combine food groups. It is allowed as a thickener during the whole30, which leads me to believe it is not a likely gut irritant. I think you would be ok with the ice cream for your dairy re-intro, as long as you are comfortable introducing sugar and dairy on the same day (some people prefer to do a separate sugar reintro).
