stand.lauren Posted June 30, 2014 Share Posted June 30, 2014 Okay, so I'm looking into transitioning into a paleo lifestyle (and hopefully W30 when I think I've got that down!), but my major issue is with coconut: it's everywhere! jent103 Posted June 30, 2014 Share Posted June 30, 2014 Sure thing. I'm not allergic but I do hate the taste of coconut, with rare exception. I haven't used coconut oil in months (I cook 95% Whole30 at home). Some things aren't quite as easy to sub - I'm not sure what would work for some applications of coconut milk (maybe almond milk in some circumstances? but a lot have non-Whole30 additives), and coconut flour has different properties than, say, almond meal, so you'd have to play around with those. But for just cooking fats, I usually sub ghee, or if I have it, bacon fat, lard or tallow from good sources. Link to comment Share on other sites More sharing options...
GLC1968 Posted July 1, 2014 Share Posted July 1, 2014 I have some digestive issues with coconut meat, so I avoid it in most of it's forms (coconut milk, coconut butter, coconut flour, shredded coconut, etc). I'm OK with digesting coconut fat, but I don't like it much so I don't use it unless its all I have. You can totally avoid coconut unless you want to make curries or something that specifically calls for the coconut flavor. I avoid coconut flour recipes in general, and I sub either ghee or lard for coconut oil. If you google paleo recipes, you do see a TON of coconut stuff. You also see a ton of deserts. I suspect it may be a matter of scale at first. I went a little overboard with my coconut milk the first time I went paleo because it was EVERYWHERE and I had a similar issue. It killed my stomach, between the coconut oil, coconut flour, and coconut milk. The "thing" at that time was stirring coconut oil into coffee, and trying that once turned me off coconut oil for the next year and a half. I only just have been able to stomach the smell in the last few months. Now, because coconut milk is about $3/can here (that's not even the organic), I don't use it unless I really, really want to make a curry, and that doesn't happen very often. I did a lot of baking with coconut flour before there were any good resources on it, and the inedible "treats" turned me off the flour. I didn't and don't use unsweetened shredded coconut, flaked coconut, or coconut butter/cream because I can only find them online. For whatever reason, I now tolerate coconut oil just fine. Guar gum is in many coconut products and some stomachs do not like it. For those in their first week, don't panic, sometimes it's just adjustment.
