INGREDIENT OF THE DAY LINKS FOR EACH DAY OF WHOLE 30!

Deb.

Recommended Posts

Hello! I am part of an amazing group on here called the Dirty30.

Some of us have done one and some two W30s together. On our second round, we decided we would make great attempts to eat creatively and challenge ourselves with new ingredients.  I posted an ingredient of the day, each day of the Whole30 journey, with links to compliant recipes. I thought these might be helpful to other people, as well as for our group to have in one place, so I am posting the “Ingredient of the Day” posts in their entirety, on this thread.  ENJOY!

(UPDATE: subsequent to this the Dirty 30 did another W30, and we did 30 more Ingredients of the Day. You can find Part 2 here: http://forum.whole9life.com/topic/22006-30-more-ingredient-of-day-links-for-each-day-of-the-whole-30-part-2/)

DAY 1- SWEET POTATO

SO our first ingredient of the day is - SWEET POTATO

Don't forget that white sweet potatoes as well as the orange ones are both W30 compliant.

(and kumara works for this if you are in New Zealand!)

I'm thinking mashed, baked, roasted, hash browned, baked and then flattened out to use as a base for toppings, yummmm

Here are some links to recipes for added inspiration:

DAY 2 – CHICKEN BREAST

The humble CHICKEN BREAST!

Can be skinless boneless, or skin on, bone in, shredded, boiled, baked, roasted, salad-ed, any way you want that sucker, we're just thinking about chicken breast tomorrow.

Here are some links for inspiration:

make sure your mustard is compliant (no alcohol, gluten, sugar etc)

I still haven't tried this and so want to - just sub coconut milk for the buttermilk

DAY 3 - RED CABBAGE

(or green if you don’t have red, but red just seems sassier)

Here are some recipes for inspiration!!

http://ohsheglows.co...lemon-dressing/

oh how I love this tahini dressing, tahini is sesame paste, totally W30 compliant and so is nutritional yeast

Nom Nom Paleo gives us TEN cabbage recipes here!

Love the domestic man

http://thedomesticma...an-red-cabbage/

I LOVE ANCHOVIES so this looks good to me

http://nomnompaleo.c...lic-and-anchovy

and hey:

http://everydaypaleo...e-cabbage-slaw/

These are just lettuce cups, so I don't think we are in SWYPO danger here. The word tacos is just marketing. But moderators please weigh in.

I wanted to make a quick note about another cabbage possibility that is so good for us! Fermented cabbage! Yes, fermented veggies are super easy to make and super good for us (full of good pro biotic bacteria).  If you don’t feel like making them yourself, some health food stores carry very good and compliant fermented veggies (check ingredient labels carefully). If you’re thinking ewwwww think again those of you who love sauerkraut and kim chi, guess what you’re eating? Yup.

DAY 5 - the super trendy ingredient of the year for the past few years -  KALE!!!!!

I've managed to eat a fair amount of kale recently and found it delicious (although confession green veggies are not my fave). I think one of the tricks to a good kale salad is to massage the leaves, yep you heard me, give it some lovin' ! There are tons of great recipes out there that include this hardy healthy green both raw and cooked.

Anyways, here are some recipes for inspiration:

DAY 7  - OLIVES!!

Olives will give you a nice boost of healthy fat, as well as that unique olivey sour flavor. I use the tapenade on meats and sometimes mixed with coconut milk as a dipping sauce, but just on their own they pair deliciously with watermelon, and with chicken.

I’m posting this recipe even though it has no olives because I came across it and it looks redonkulous. And I sort of regard capers as honorary olives. And I love anchovies. Its a saucy sauce.

and I’m making this fo sho - Chicken Marbella (with olives and prunes) (NOTE, THIS BECAME ONE OF MY FAVORITE RECIPES, IT IS REALLY DELICIOUS)

PS, out of olives day came our namesake drink, the Dirty30. Mix club soda with olive juice and sip calmly.

CAULIFLOWER!

Cauliflower is making a comeback. I think it’s the new broccolini!

DAY 9 - NUTS

Ingredient of the daayyyyyyyyyyy (say it like Oprah).....!!!

ITS TIME TO GET NUTTY! Oh nuts. They are so good. But they can be a “no brakes” food, so be careful and include them with a meal if you think that’s a danger zone.  Ain’t nuttin better than a sliced up apple with almond butter.

http://theclothesmakethegirl.com/2009/08/05/presto-pesto/

Just as an aside here - Whole Foods makes a raw pistachio pesto that is so expensive it must have gold dust in it but is seriously one of the best things I’ve ever tasted. They also sell delicious dairy and nut free pestos.

And on that note, this looks delicious  - Pistachio Pesto Chicken with Spaghetti Squash

DAY 13 – EXOTIC STARCHES – PLANTAINS, YUCCA, TARO

Plantains can be found in most US supermarkets, they look like big green bananas. Here's a little explanation on this versatile food which is SO worth taking the time to work with.

Plantains contain more starch and less sugar than dessert bananas and are therefore cooked or otherwise processed before being eaten. They are always cooked or fried when eaten green. At this stage, the pulp is hard and the peel often so stiff, it has to be cut with a knife to be removed. Mature plantains can be peeled like typical dessert bananas, the pulp is softer than in immature, green fruit and some of the starch has been converted to sugar. They can be eaten raw, but are not as tasty as dessert bananas, so are usually cooked. When mature, yellow plantain are fried, they tend to caramelize - turning a golden brown color. They can also be boiled, baked or grilled over charcoal - both peeled or still in the peel.

(you'll sometime see plantain flour used in paleo recipes, or a whole plantain used for sweetening)

My favorite recipe for plantains last W30 was this one, YUM-MO

Venezuelan Chicken Salad with Tostones (double fried green plaintains)

http://thecuriouscoc...n-avocado-salad

And here's a recipe for plantains when they are ripe and sweet - called maduros. Would also work to just sprinkle with some cinnamon.

http://www.foodnetwo...ros-recipe.html

Sneaking another one in...

Plantain bacon, kale, raisin hash!!

http://leafparade.co...ins-and-tahini/

Hearts of palm - I highly recommend these - if you can find them fresh, they taste kind of like a fatty cucumber - or something, really delicious and satisfying in a salad with some avocado and citrus. Otherwise you can find organic canned hop in your health food store. Here's a super recipe for compliant hummus using hop

Heart of Palm Hummus

http://cupcakesomg.b...rt-of-palm.html

Yuca (I discovered yucca is a misspell), aka cassava

http://en.wikipedia.org/wiki/Cassava

There are many ways to use this versatile root but at the first intro, we'll eat it best in the form of yuca fries. I first had these with Peruvian chicken with aji sauce and wow, what a combo.

(here's a paleo version of that if you're interested, let the chicken juices drip on your fries mmmhmmmm http://www.miemonste...-roast-chicken/)

Yuca Fries

http://chriskresser....ipe-yucca-fries

And finally taro, this may be easier to find for our South Pacific/Asian friends but is also available here in the US.

You'll sometimes see taro chips in health food store, very tasty.

DAY 15

COCONUT!!!

Coconut in all its forms (milk, oil, butter, flaked) is a great source of fat. The full fat milk and cream can be used in places that you would normally use half and half or cream, with really pretty good results.

It can be hard to find the compliant coconut milk with no additives. The best one I’ve found is Natural Value. I’m thinking about ordering it by the case.

http://www.amazon.co...ue coconut milk

However another option is to make your own coconut milk!
Here’s a recipe:

DAY 20

Sweet sour juicy yummy citrus – the GRAPEFRUIT. Oh I love me some grapefruit. I often treat it like a lemon – zest it into salads/dressings, use the juice as I would lemon, stuff a sliced up grapefruit inside a chicken you’re about to roast, or lay slices over fish you’re gonna bake. Yum, and yum. The good news is, it seems to be pretty easy and cheap to find bags of organic grapefruit at both Whole Foods and Trader Joes.

DAY 21

LEEKS!

The first time I realized I loved leeks was when working in a restaurant and one of the chefs served up crusty bread with this unbelievable topping for family meal. It was leeks! Sauteed with thyme, butter, and some other items that shall not be named on this forum. But that was it, I was a leek convert and have remained so.

I'm making this. Cauliflower and Leek "Gratin" (NOTE THIS IS NOW ONE OF MY FAVES I MAKE IT AT LEAST ONCE A WEEK, ADD LEMON ZEST AND MORE SALT)

DAY 22

JICAMA. I apologize to our international friends who may have a hard time sourcing jicama. If anyone in the USA has never had it, I urge you to try. Its very refreshing and good for dipping into things, as well as in salads, or apparently (I just read on the interwebs), cooked up as home fries! (I've never had it cooked). To me, it tastes like a cross between a potato and a cucumber. Actually its a lot like an Asian pear but with much less sweetness. It super delish with mango, or just by itself with some lime juice and spicy salt. If you've ever been lucky enough to have one of the bags of chopped fresh fruit from the vendors that we have all over Los Angeles - topped with lime juice, salt, and chilli pepper, well there's jicama in that and its the perfect complement to the melon, mango and cucumber. Oh, btw, the J is pronounced like an H. Phonetically it would be "HICK - ah - maa". NOTE: jicama is actually the root of a legume plant. Because its the root, it is considered W30 compliant.
