On our second round, we decided we would make great attempts to eat creatively and challenge ourselves with new ingredients. I posted an ingredient of the day, each day of the Whole30 journey, with links to compliant recipes. I've managed to eat a fair amount of kale recently and found it delicious (although confession green veggies are not my fave). I think one of the tricks to a good kale salad is to massage the leaves, yep you heard me, give it some lovin' ! I use the tapenade on meats and sometimes mixed with coconut milk as a dipping sauce, but just on their own they pair deliciously with watermelon, and with chicken. Deb. Posted July 27, 2014 Author Share Posted July 27, 2014 DAY 13 – EXOTIC STARCHES – PLANTAINS, YUCCA, TARO Plantains can be found in most US supermarkets, they look like big green bananas. Here's a little explanation on this versatile food which is SO worth taking the time to work with. Plantains contain more starch and less sugar than dessert bananas and are therefore cooked or otherwise processed before being eaten. They are always cooked or fried when eaten green. At this stage, the pulp is hard and the peel often so stiff, it has to be cut with a knife to be removed. Mature plantains can be peeled like typical dessert bananas, the pulp is softer than in immature, green fruit and some of the starch has been converted to sugar. They can be eaten raw, but are not as tasty as dessert bananas, so are usually cooked. When mature, yellow plantain are fried, they tend to caramelize - turning a golden brown color. They can also be boiled, baked or grilled over charcoal - both peeled or still in the peel. (you'll sometime see plantain flour used in paleo recipes, or a whole plantain used for sweetening) My favorite recipe for plantains last W30 was this one, YUM-MO Venezuelan Chicken Salad with Tostones (double fried green plaintains) http://thecuriouscoc...n-avocado-salad And here's a recipe for plantains when they are ripe and sweet - called maduros. The full fat milk and cream can be used in places that you would normally use half and half or cream, with really pretty good results. It can be hard to find the compliant coconut milk with no additives. The best one I’ve found is Natural Value. I often treat it like a lemon – zest it into salads/dressings, use the juice as I would lemon, stuff a sliced up grapefruit inside a chicken you’re about to roast, or lay slices over fish you’re gonna bake. If anyone in the USA has never had it, I urge you to try. Its very refreshing and good for dipping into things, as well as in salads, or apparently (I just read on the interwebs), cooked up as home fries! (I've never had it cooked). To me, it tastes like a cross between a potato and a cucumber. Actually its a lot like an Asian pear but with much less sweetness. It super delish with mango, or just by itself with some lime juice and spicy salt. If you've ever been lucky enough to have one of the bags of chopped fresh fruit from the vendors that we have all over Los Angeles - topped with lime juice, salt, and chilli pepper, well there's jicama in that and its the perfect complement to the melon, mango and cucumber. Oh, btw, the J is pronounced like an H. Phonetically it would be "HICK - ah - maa". NOTE: jicama is actually the root of a legume plant. Because its the root, it is considered W30 compliant.
