I need to eat a better breakfast because I work so early it's always a struggle. Last round I ate too much fruit and nuts to make up for not getting a good breakfast. Lazy Marla Posted August 4, 2014 Share Posted August 4, 2014 I love cauliflower biscuits. They are vegetable, egg, and if you add some Prosciutto it adds a nice baconish flavor. misskrissy27 Posted August 4, 2014 Share Posted August 4, 2014 I agree on the egg "muffins"...I bake a dozen or more every week and add different things into them. Fresh salsa (which is just diced tomato, onion, pepper and some herbs), avocado, veggies, and sometimes a meat I throw in there. I will eat two of them and not be hungry until the second meal. GrannieD Posted August 7, 2014 Share Posted August 7, 2014 You can make the muffins for literally eating on the run. Or take the same basic recipe and make a frittata. I make a big one on Sundays and have enough to get me through my week worth of breakfast. I cut it like a pizza and store individually...grab and go!
