However if you are looking to create a fluffier omelete or scrambled eggs with adding some beneficial fats add some coconut milk (coconut milk is great for enhancing flavours of other things so coconut flavour is not very promenint - unlike coconut oil) Link to comment Share on other sites More sharing options...

ktothev Posted August 17, 2014 Share Posted August 17, 2014 I don't add anything to my eggs when I make omelettes, but I do add a little clarified butter when I make scrambled eggs - it doesn't take much, and it does seem to make them much fluffier. praxisproject Posted August 18, 2014 Share Posted August 18, 2014 If you're looking to change it up a bit, cook in different fats: chicken fat, duck fat, goose fat, bacon fat... I do "naked scramble", just eggs, beaten, and for omelettes, the same, and a little coconut milk or cream for something different If you want a puffy omelette, whip the egg white separately and then mix (it's a lot of work, you gotta really love a fluffy one).
