Picabo Street is considered the greatest female power and speed skiier in American history. She first joined the U.S. Ski Team in 1989, at the age of 17. In 1993 she broke through at the World Championships, winning a silver medal in the Alpine combined. In 1994, she won her first World Cup downhill in addition to her Olympic silver medal. Her greatest years were 1995-96. In 1995 she won six World Cup downhills and the overall World Cup downhill title. She repeated the overal downhill title in 1996, winning another two World Cup downhills that year, and added a gold medal in the downhill at the World Championships and won a bronze in the Super-G at the Worlds. She did not win any World Cup races in 1997-98 but surprised by winning the Super-G at the Nagano Olympics. Shortly thereafter she sustained a very serious crash at a race in Switzerland, breaking her left femur and tearing the anterior cruciate ligament in her right knee. After two years of rehab she returned to the ski circuit and raced again at the 2002 Winter Olympics before retiring. She has since worked as a commercial spokeperson for various companies. Growing up as a skiier in Sun Valley, a run was named after her, with the former “Plaza” run re-named as “Picabo’s Street.” Street was inducted into the US Ski Hall of Fame in 2005.

 - the next time you look into the mirror I want you to realize that you are looking at your BEST friend. You might think that someone else is your best friend...but they aren't! Nobody supports you or wants you to succeed more than the person staring back at you. The person staring back is the one that you have said horrible things to, thought horrible things about, treated terribly.......things you would have never done to the person you think is your best friend.......if you had, your "best friend" would have left you. Well Fed 2 favorite, favorite recipe: Plantain chips and taco meat! OMG, I love the taco meat.

 

I have made this recipe several times now, and I never get tired of it. Meal 1, 2 or 3 ... doesn't matter! I eat it hot, in a bowl, with a ton of spinach or kale thrown in (either fresh or frozen... doesn't matter); I eat it cold at work, on a fork or on a FEW plantain chips; I think a little bit folded into an omelette would be super, with a few thinly sliced scallions for garnish; I'm also thinking of putting some in a little oven-proof dish, adding diced, cooked veggies of various kinds, putting a layer of leftover mashed potatoes on top, baking it a while, and calling it a W30 Shepard's Pie; roll some up in lettuce leaves, maybe, though that doesn't much appeal to me; add some boiling stock and some diced potatoes and veggies and call it spicy vegetable beef soup; endless possibilities.
 

I have made it even a little bit spicier than Well Fed 2 does (and she's pretty spicy!). Yum.

Plantain chips

 

So, some very wicked person here on this thread (or perhaps on the other, original thread) made an offhand comment about spicy plantain chips at Whole Foods. Oh dear. It was just a casual mention, in the context of some other topic entirely, but still, there it was, and it could. not. be. ignored.

 

I decided to make my own, following the Well Fed 2 method. My first attempts were tragic. Note to self: do NOT use yellow plantains; they must be very, very green. I tried again, after discovering my spiralizer will, in fact, slice very green plantains into paper-thin discs. Better results, but not super exciting.

 

So... yup, I got some from Whole Foods. I ate them slowly over several days. I put spicy meat on them. I put guacamole on them.  Yum. I am going to attempt to make more myself, now that I know what they can taste like.

 

A note about ingredients: my plantain chips use coconut oil, spices, and salt. The Whole Foods chips use “palm oil (olein)”.

 

I Googled "whole30 olein" and found this:

My gut instinct was to tell you to drop them, but then I did a little poking around... I haven't changed my mind, but I did find this really interesting...

The main issue is whether the oil comes from the kernel (seed) or the fruit of the palm plant. The stuff from the seed is very similar to all the other seed oils and is pretty much bad news bears. The stuff from the fruit is pretty similar to coconut oil and actually a decent choice. The biggest problem comes in when companies take the palm oil, no matter which part of the plant it comes from, and chemically process it to separate it into liquid and solid versions. (Palm olein is the liquid part). The oil is bleached, refined and chemically treated to get it to that state.

Technically, are they compliant...? Meh, I suppose they fall into the seed oil loophole (bad choice, but not technically forbidden). Do you need to start over? No, I don't think you do. Should you keep eating them? I probably wouldn't.

I hope that helps you as much as it did me!

 

 

So yes, I'm eating a few Whole Foods chips from time to time, and I'm going to make my own this weekend.

Joni, I don't want to lead you astray! While the olein is technically Whole30 compliant, it is not really recommended (seed oils). I'm eating the chips once in a while, but am going to make my own with coconut oil.

 

That said... in my closest Whole Foods, it is in the store's bulk area, but not in one of the bins. They have a big shelf of pre-packaged things like dried fruits, nuts, etc., and the plantain chips are on the very bottom shelf. Note that almost NOTHING else in that area is W30-compliant... most have bad oils and/or sweeteners.

Use them zested to brighten up any recipe. Stuff ‘em inside your chickens before they roast. Slice them on top of your fish before you bake it. Drink hot water with a squeeze of either when you wake up. Interchange one with the other. Borrow them from your neighbor's tree. What? Who said that!

Last go around (or a couple of weeks ago) I made a cilantro lime chicken in the crock pot. It was DELICIOUS!!

 

As promised, I went to the grocery store this morning before we left. Instead of paying for lunch and snacks for three people all along the way, I paid $25 and packed the cooler. I don't think I could have done better than that!

 

I also snuck in a 3 mile run and cleaned out the fridge before I left!

 

It's good to be back with Rick. We're commiserating on our exercise plans for the weekend.

 

You know who we're missing? CARA!! Where is she?  Laurie how are you holding up? I'm listening to the book and smiling and hope you'll get a kick out of it.

 

So far my favorite quote from the book: "Make a vision board. It's like having a play date with God!"  Deb I knew you'd love that!

Anne-   I just finished up my Well Fed Plantain Nachos before I sat down to I write this!!  One of my absolute favorites!!!    I have to pack up the extra meat and plantains before I even sit down or I will go back and pick up "just one more bite" until I am stuffed beyond any comfortable feeling.  And don't give up on the yellow plantains....  try tostones.... ripe plantains, cut think, fried in a bit of coconut oil, smushed and fried again  with some cinnamon and you have a lovely, slightly sweet starchy carb for a meal or a PWO snack.  

 

Higs-   thanks for the welcome and the round up...  i feel like i have just tried to meet and remember the name of a huge family where everyone is talking at once but no one minds at all.    The pictures of your vacation look amazing!   

 

 Meadow/Chief-   thanks for re-introducing me to my BEST friend... I've been getting to know her again in the past year or two and she is not too bad, though sometimes I do not give her the recognition she deserves.  So.... good job BEST friend for working out so hard today and making me great nachos.   AMEN! 

 

Deb-  thanks for the welcome!   I did get in my mushrooms today -  unfortunately a boring salad bar mix-  but it brought a smile to my face to raise the fork in a toast to the Dirty30 members who were probably eating mushrooms at the same time.     But  I am stumped though on how to choose just ONE of the lemon/lime recipes.   I think I am going to make the simple choice of first on the list-  I have never used anchovies so a new experience thrown into the mix!

 

Joni-   I have also recently found myself a bit confused about the aisles at the grocery store..... even in just a few weeks a quick trip around the perimeter has been come standard.  I took a walk up and down the other day and was just amazed at how many aisles really had nothing I was interested in.    

 

CC-   I am a fellow book lover!!   I usually have about a dozen books from the library (and consider any overdue fines a great way to support the institution!)  and another 6 or so on the kindle.   My all time favorite is The School of Essential Ingredients by Erica Bauermeister (warning the food in this book is not Whole30 compliant but the stories are very satisfying)  My current fiction is a creative young adult novel called Timebound by Rysa Walker (yes time travel).   Most of my recent non-fiction has been Paleo basics and cookbooks, but I also have 10% Happier by Dan Harris on the back burner...  have you read it?  I do have to say though that trying to be Whole9 and focus on getting good sleep cuts into my reading time.   

 

 

Speaking of sleep -  rest well Dave!     I must head in that direction as well.    Good night all!

Deb--thanks for the butcher and sausage recs. They look amazing. Totally un-whole30 side note: the sausage place is right by a wonderful, non-compliant French bakery/cafe where I devoured almond and chocolate croissants (and eggs) with abandon while pregnant with my twins--it's across from my OB's office. Whenever she got held up at the hospital, I'd pop over and eat until she got back for my appt :-).

Really want to check out the butcher in Santa Monica. Do you go regularly?

Today I called the local whole foods and asked about Pederson's sugar-free bacon and Red Boat fish sauce. Amazingly, they had both in the back, not on the shelves. The bacon had just come in, and the Red Boat is a new item. So, I went to whole foods and bought two packages of bacon and two bottles of fish sauce and nothing else. Strangest WF purchase ever!

Had my shrooms in a scramble this morning. Proud that I've been 100% compliant for nine days straight. Feeling good, clean energy. Cooking a ton. Reading Nom Nom and Well Fed cookbooks and cooking from them with eal enthusiasm. Did a big prep session on Monday--that really helped. My hubby is eating my cooking--yay! He may add in a tortilla or some string cheese, but it's major progress.

Twins are ridiculously cute. Can't believe they're almost two! Ruby ate leftover Well Fed Chocolate Chili today while Ben was napping. Paleo toddler in the making!
