So I found some compliant bacon locally - SCORE! Problem was, I haven't been a fan of bacon since childhood (when I started eating meat again after being vegan for 8 years, it just wasn't appealing anymore). But, I was determined to like it! Saw a recipe for pan-fried, bacon-wrapped avocado slices and a big "YES!!!!!" lightbulb went off in my brain.

Sliced avocado


pinch of cayenne and/or sea salt and/or drizzle of lime juice (optional)


Wrap the avo slices in bacon. Place in a cast-iron pan, seam side down, and fry on medium heat until crispy. *DROOOOOOOL*


Bonus: you get bacon grease to use for cooking other stuff (like Nom Nom Paleo's Cracklin' Chicken, as I did).
