Gin's second Whole30 log

Today is my day 0; I begin tomorrow. I have stocked enough bison, beef, poultry, pork, seafood, etc to last through the 30 days for myself and my daughter so can keep my shopping focus on fresh vegetables and fresh eggs/fish as needed.  I didn't write out my meal plan and instead prefer to set it out in my fridge as a visual 3-D system of what I'm making in what order.  It works for me but I doubt anyone else would notice or interpret my system just by looking at my shelves. 

 

I've been eating Paleo with occasional drinks (tequila, rum, cider) so I'm pretty used to the cooking and meal planning except that this time around I'm going to follow the Low Fodmap.  I've been practicing cooking without onion and garlic but tomorrow starts the real deal.  This is going to be interesting! 

 

I'm also pretty excited that my daughter is doing it with me this time around.

So today was easy enough.  I barely went off whole30 after my first challenge so cooking whole30 meals is habit by now.  I had eggs with zucchini and tomato for breakfast and pork loin and butternut squash soup for lunch then repeated it for dinner plus a little bit of cucumber salad.  it was good and I made a lot because i was expecting company that ended up not eating.  lol

Poached eggs, a bit of pork belly with steamed kale for breakfast.  Lunch was leftover pork loin with some cucumber salad and dinner was roasted baby eggplant and smoked herring. 

 

I replaced my kitchen table with something bigger that also includes some drawer storage space so i now have a place to keep my napkins and place mats, etc.  Yay!  I also installed a rack in my kitchen and hung all my cast iron and stainless steel pans plus a few of my smaller sauce pots.  It felt right to make physical changes in my kitchen to complement the other changes that have been happening in there since my first whole30.

Well, I'm super tired and a bit stiff today but I was up late helping my daughter pack her breakfast and lunch for tomorrow and we had storms last night.  My journal from my first whole30 does show I was tired on day 3 so it could be any combination of those factors. 

 

I like to begin my day with plenty of hydration before I make breakfast so I was just drinking water for the last couple of hours.  now that I have about a quart of spring water in me I think it's time to contemplate food... if I can just move...

Well I made it through the day without killing any of the things.  I'm still tired and I had to change into fat jeans midday. 

 

Breakfast was pork and bean sprouts with the leftover roasted eggplant from last night. 

 

I made chocolate chili without onion or garlic and tossed in a bunch of bell peppers as well as some other whole peppers from a local farm.  It smelled so good I had it for both lunch and dinner, making salad and mixed berry bowls to go along with it since the peppers really didn't add enough vegetable to the dish to call it a complete meal.  I had a handful of macadamia nuts with the berries and feel my day is complete. 

 

I'm tired, feeling blown-up, and am irrationally irritable.

I woke up feeling much happier today.  I had deviled eggs and cantaloupe with some blueberries for breakfast.  Lunch was some leftover chocolate chili and spinach.  Dinner was roasted ginger-lemon chicken, carrots, and sweet potatoes.  I had a piece of coconut with dinner too.  It may seem early in they day but I'm going to try to wind down and get to bed on time tonight for once.  On time for me is to be sleeping at 8 since I get up at 4.

Okay, today is in the bag.  I had hardboiled eggs and raspberries for breakfast then a carrot as an afterthought.  I swear I only at the raspberries to make sure they didn't go bad.  hahaha 

Lunch was a mishmash of leftovers like the last of the pork loin, a bite of chili, a few bites of yams and carrots, and  then some freshly cut and broiled eggplant.  I had a bit of coconut as I cleaned up.

I made zucchini noodles with chicken and tomatoes for dinner and a side of cashews. 

 

I'm surprised how well I'm doing without garlic.  I've never had a good relationship with onions.  As a matter of fact, my eyes nearly burned out of my skull yesterday from onions in someone else's salad.  That is a common reaction for me and it's never a good scene.  The pain was nearly unbearable yet I managed to stay alive long enough to get past it.  I had both kinds of tears in my eyes before it was over. 

 

I have put together a grocery store list but am trying to figure out if I want to hold out until the weekend is over to shop.  I got a fresh supply of veggies on Wednesday so I'm tempted to avoid the weekend crowd.  This is hardly a major problem, just some end of day ramblings.

Day 6 went well for me.  I made an early run to Whole Foods for a few things like grass fed unsalted butter so i could make more ghee today.  I already have plenty of meats and veggies but did grab some more squash, olives, and other canned things I occasionally use.  I was in and out of there early so I did not have to deal with overcrowded aisles or insane check-out lines. 

 

I made baked eggs in prosciutto cups and fresh berries, cantaloupe, and coconut for breakfast.  I had a mixed green cucumber, tomato, black olive and whole anchovy salad for lunch which really hit the spot.  Dinner was just a simple portion of strip steak with green beans.

Deviled eggs and broiled eggplant for breakfast.  I really think eggplant is a problem for me.  I've had my suspicions and it's starting to be more and more singled out.  My throat will burn a bit, breathing a bit different, stuffiness, and an upset stomach. 

 

Lunch was pork belly and some leftover deviled eggs with roasted peppers and leftover eggplant.  Eggplant is not looking good for me and I've got two eggplants left.  Darn! 

 

Dinner was mixed greens wilted by sauteed shrimp which was delicious and did not cause any problems.  Yay.

Felt pretty good today.  I had chicken and tomatoes, yams and carrots, hard boiled egg, bison steak, spinach in chicken/bone broth and macadamia nuts today.  Breakfast and lunch were combinations of the first 5 things (leftover clearing) and dinner was the steak and spinach soup.

It's feeling like second nature by now.  I had a burger and spinach soup for breakfast.  Oh, and half a grapefruit while preparing that.  Lunch was cracklin chicken with mixed green salad with shredded carrot and then dinner was light, anchovies and green beans.  Had some pistachios too.

Yesterday went well.  Deviled eggs with a side of chili and a cucumber tomato salad for breakfast.  Lunch was roast chicken with carrots and yams (a favorite combo).  I had a burger over mixed greens and little tomatoes for dinner.  I snacked on pistachios a couple times but kept it small each time. 

 

I made it to the Farmer's Market as soon as it opened yesterday and got lovely tomatoes, greens, carrots, assorted squash, plus some grapes that taste out of this world.  I don't usually buy grapes but I will occasionally get these kinds at the market.

I had some hard boiled egg and kippers with tomatoes for breakfast.  Lunch was a burger over a mixed salad and dinner was sauteed green beans and tomatoes with some leftover roast chicken. 

 

I kept busy today.  I've been reorganizing my space and today I replaced my old sewing chair with something much more comfortable, more attractive, and more cheerful looking.  My kitchen has been getting most of the attention lately so it was nice to do something elsewhere today.

I overslept today, 2 hours.  I needed it and then felt great the rest of the day.  Deviled eggs for breakfast again, my daughter's favorite.  I had some fresh tomato and a bit of leftover yams and carrots with that. 

Lunch was salmon patties with a mixed green salad with cucumbers and tomato.

Dinner was sardines and zucchini noodles with (surprise!) fresh tomatoes and basil.

Before I go to bed:

Breakfast was chicken seasoned with cocoa and ginger with a variety of leftover veggies, yams, carrot, green beans, tomato and raspberries.

Lunch was the last of the leftover chili served over small-cubed zucchini and a side of roasted carnival squash. 

Dinner was leftover salmon with some sauteed green beans and a handful of macadamias.

I had the same things for breakfast and lunch, chicken breast and kale, seasoned differently.  I had both in the fridge needing to be used.  I still have a lot of kale but at least the last of that pack of chicken is all cooked and eaten while it was still fresh.  (I have a bunch of thighs in there though so chicken might also be for dinner.)  I snacked on pistachios between lunch and dinner. Dinner was another mish mash of things.  I ate two hard boiled eggs, some shredded sweet potato with cinnamon, yellow squash with tomato, and some leftover green beans with a few bites of leftover chicken.

My stomach felt better today than yesterday. 

Breakfast was 4 deviled eggs with cucumber and tomato.

Lunch was cracklin chicken and sauteed kale.  Had some almonds halfways between lunch and dinner.

Dinner was anchovies with spaghetti squash and sauteed tomatoes plus a side of kale.

I'm feeling really good today, got a lot done around the house even with a full day of work. 

Breakfast was poached eggs over raw spinach with black olives, anchovy flats, and roasted pepper.

Lunch was salmon patties with zucchini and tomato.

Dinner was shrimp and sauteed spinach, tomato, beet greens, and Swiss chard.

I had a quickly thrown together breakfast of leftover chicken, hardboiled egg topped with a dollop or mayo and dil (lazy devil?) with a side of fresh raspberries.  I had a few walnuts and a few cashews through the day until my very late lunch.

Lunch was zucchini noodles with bison steak. 

Dinner was lobster tail with delicata squash and cucumber slices.

 

I only slept a few hours last night.  Something woke me up and I never fell back to sleep.  I'm exhausted but still had a very busy day and just got back from a run and think I need to kiss my pillows.

I got better sleep last night but still not a full 8 hours. 

Breakfast was a lovely coconut pumpkin soup with fried eggs and strawberries on the side.

Lunch was a steak, bok choy, and yellow pepper stir fry with fresh slices of ginger.  I enjoyed some lavender kombucha with that which went perfectly.  I had some macadamia nuts too.

Dinner was roasted chicken with carrots and sweet potatoes. 

1.8 miles in tonight's run, wind sprints.  I dutifully stretched before coming online but my legs still hate me.  Yesterday was my first run ever.  I signed up for a 5K race scheduled for 15 Nov before I even began running.

woke up late, still haven't been able to get in a full night's sleep.

Breakfast was cucumber slices topped with sliced hard boiled egg, rolled anchovy flats with caper centers, roasted pepper, and shredded carrots.

Lunch was white acorn squash soup with lime-basil chicken, walnuts, and cucumber.

Dinner was catfish in clay pot (except I used cast iron lol) over green beans. I had a small handful of macadamia nuts after dinner as I sipped my nighttime herbal tea.

Whoops, I missed a few days of posting but I was staying right on track!

 

On the 19th:

hb eggs with anchovy flats, capers, roast pepper, cucumber, shredded carrot

white acron squash soup, basil-lime chicken, cucumber, walnuts

catfish in clay pot (except I used cast iron to mimic the dish) over green beans, macadamia nuts

I was tired this day but I think it was from the running.

 

On the 20th:

prosciutto eggs with coconut pumpkin soup

steak w green beans

cucumber dill gazpacho, sardines, salad with olives

 

Sept 21

Kippers, blueberries, cucumber soup

hb eggs, anchovy flats, salad, almonds

squid over zoodles, macadamia nuts

 

Today the 22:

deviled eggs, zoodles

steak, roasted yams and carrots, mixed greens salad

blueberries, strawberries, macadamia nuts, bowl of homemade chicken soup

chicken and bok choy

 

Today was another wind sprints day, the other days between were just regular running more or less.

I made green eggs this morning.  Kale, spinach, Swiss chard in the blender with eggs and a dash of sea salt before pouring into my hot skillet.  I topped it with tomato wedges.

I made a quick chicken, cashew, and green bean stir fry for lunch

Dinner was spaghetti squash with green olives and tuna.

Day 24 was a tired day.  I didn't sleep last night because my dog was having a hard time post-dental surgery.  (talk about first world problems)

Breakfast was leftover spaghetti squash with anchovies and capers

Lunch was pork belly with mixed greens

Eggdrop, kale, spinach, chard soup as a midday snack.

Dinner was bison porterhouse and green beans

macadamia nuts after a 2.84 mile run

Paprika and hing meatballs with bell peppers for lunch

2 zucchini rolls stuffed with tuna for a snack

steak, mixed greens, roasted baby blue hubbard squash filled with blueberries and slices strawberries for dinner.

 

Wind sprints tonight.  ouch, my hamstrings!  hahaha

 

Noticed breathing difficulty from lunch, another strike against nightshades for me.  Should probably at least stay away from them all while training for this race and do a more thorough evaluation after that if not give them up for good.  This isn't new to me, I've always pretty much known or at least strongly suspected.  Not thrilled at giving up some of my favorite things but I do like breathing quite a bit.
