I am obsessed with kabocha squash, aka Japanese pumpkin. Seriously, check out the super simple nomnom recipe Deb posted. Stuff is magic. I've been roasting it tossed with coconut oil and Penzey's tsardust seasoning and eating atop a massaged kale salad. Every other day I eat this. No more sweet potatoes (for a while) for me.

I second the kobucha squash.  Yummo!

 

Doesn't seem like you need more recipes but here are two easy ones I've been making this season:

 

Easy Thai pumpkin soup: 1 can (14 oz) pumpkin, 1 can light coconut milk (or the full fat stuff if you want to be really decadent ;) ), 2-3 tbsp of Thai Kitchen's green or red curry mix.  I add a tsp or so of oil to the pot, heat up the curry mix until its fragrant, add the coconut milk then the pumpkin and then use an immersion blender to smooth it out.  Its a nice change from the usual "pie" flavors of most pumpkin soups (nutmeg, cinnamon, etc).  

 

Pumpkin pie filling: this one is a SWYPO recipe (so maybe save it for post W30) - 1 can pumpkin, 2 eggs, 1/2 c coconut milk, 2-4 tbsp date paste, whatever pie spices you like (I use Trader Joe's pie mix and add ginger because I love ginger).  Prepare following the directions on the can for mixing and baking.  I eat this for breakfast a lot - its not nearly as sweet as regular pie and not too many people would pick it for dessert of Turkey Day, but I think its a nice seasonal breakfast with a piece of turkey sausage or something :)
