Simple, easy vinaigarette dressing!

Hi everyone, I just started the Whole30 program September 1st and am

trying very hard to not be overwhelmed, lol!  I have searched and searched

Paleo recipes and I can't find a simple, easy vinaigrette dressing...please help!

I need something for my salads.  I made the homemade mayo and used it

for creamy garlic dressing but need something else as well that's fast and easy

to make on the fly! TIA

My standard balsamic:

 

  • ¾ cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp red wine vinegar
  • ¼ tsp coarse grind Dijon mustard
  • 1 tsp minced fresh herbs (e.g. parsley, chives, tarragon)
  • Salt and ground white pepper (or freshly ground black pepper), to taste

Shake and done.

 

Avocado Chile Vinaigrettte:

 

  • 1 large ripe avocado
  • 3/4 cup EV olive oil
  • 1/2 cup white balsamic vinegar (yea, white matters)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon freshly ground black pepper

Puree in a processor or blender.  I love this in salmon salad, just pan sear a piece of salmon to medium temperature, fork mash it like you would a can of tuna, mix in some of this in place of mayo plus some smoked paprika and tiny dice celery.  This dressing thickens when stored because EVOO.
