The SCOBY definitely does need sugar to grow...but fortunately it eats it all in the process leaving barely residual amounts! If you're buying kombucha from the store, check your ingredient list. As long as there is no sugar (or other non compliant item) added as an ingredient you're fine. The nutrition grid may still show a sugar content (eg, 1g of sugar) but that's not to be concerned about. If you make it yourself...well....that's just a whole other bag of fun....and a billionty times cheaper! Link to comment Share on other sites More sharing options...

Just read your labels carefully—sugar listed in the ingredients generally means that it was added after fermentation, and that’s a no-go. The formula that I successfully use is 1/8 cup sugar per cup of brewed tea + one more cup of clear water. The SCOBY will prefer white sugar. I've heard of people successfully doing it with other types of sugar but I've heard just as many have issues. White sugar is your best bet. I am in the process of growing a SCOBY, but not quite ready yet. Sometimes I drink the flavored ones, sometimes the original. I have some digestive issues that I really need probiotics for, but also the 'buch is so delicious in the morning. I also get a nice energy boost from it. I recommend the 'buch to anyone! She knows someone who's more than happy to share her SCOBY. I'm going to keep gently requesting she organize this for us as we were all quite happy to pay for time and costs. It energized me and I just felt great. I find it will be great when at a gathering and everyone is drinking cocktails...I can enjoy my 'buch! I think I'm pretty knowledgeable about food, so it surprises me that I now need to google what this is, since it sounds like something I *might* like. At first I was kind of skeptical but I bought my first commercially prepared organic kombucha or 'bucha as some call it and it was kind of nice, it was ginger based so reminded me a bit of a lightly flavoured ginger ale. Sugar is Sugar, Yeasts are Yeasts.All Kombucha has sugar and should be avoided on the Whole 30. Why is this even allowed?I will say this again. All commercial Kombucha has sugar. It has less than a can of coke but more than water. There is no labeling requirement to list the types of sugar pre or post fermentation. While Kombucha may have some health benefits for it does contain probiotics it should be avoided. Kombucha also contains trace amounts of Alcohol.
