AllyB
Someone asked about freezing sweet potatoes, so I thought I would ask about freezing acorn squash. There is a local farmer who grows the best organic acorn squash. I'd love to freeze some for later. I'm sure I could cook it, mash it and freeze. But I'm wondering if there is a way to freeze it (peeled, sliced and raw) so I can roast it later? Thanks!
MeadowLily
It won't ever have the texture to roast it ...after you freeze it. It will turn dark in the freezer by peeling, slicing and leaving it raw.
KathyV
I have always had good luck with freezing it after I have cooked and mashed it and put it in individual serving sizes.
