Homemade Mayo

Most of the things I've read don't give it a long refrigerator shelf life.  I am inclined to say no more than 4 to 5 days which is problematic since no one in my family but me likes mayonnaise.  I am often faced with very sadly dumping the leftovers down the disposal and mourning the loss of another cup and a quarter of olive oil.  I need to find a mayo buddy!

RGJaz2014 - I think that timeline is very short.  Basically your mayo will last as long as the expiry date on the egg that you used. There's nothing else in the mayo that would turn it any quicker....I say don't dump it!


(my mayo-addicted heart broke when I read that you've been trashing it after 4 days!)
