Homemade Mayo

I've been making the olive oil recipie in ISWF and then also making the ranch recipie. I'm wondering how long each of these stay good in the fridge...so far there hasn't been a problem but I worry. TIA

The maybe expires when the eggs that you made it with expires.

Most of the things I've read don't give it a long refrigerator shelf life.  I am inclined to say no more than 4 to 5 days which is problematic since no one in my family but me likes mayonnaise.  I am often faced with very sadly dumping the leftovers down the disposal and mourning the loss of another cup and a quarter of olive oil.  I need to find a mayo buddy!

RGJaz2014 - I think that timeline is very short.  Basically your mayo will last as long as the expiry date on the egg that you used. There's nothing else in the mayo that would turn it any quicker....I say don't dump it!

Try using it in sauces that you can use on more foods.  That also works with batches that don't turn out perfectly

"Pasta" Carbonara would be a good recipe to adapt to this.
