Today was day 10, and it went okay.

 

M1: 2 SSU eggs, 1 sausage patty (mine), a little over 1 cup collard greens.

 

M2: about 1/2 cup mixed starchy vegs (parsnips, sweet potato, red potato, etc.), about 1/2 cup of steamed carrots, 4 strawberries, a can of tuna with a packet of guacamole and spices, and 1 cup leftover collard greens.

 

M3: ...nooot much of an M3 to be honest, I was trying to drag myself down to cook when I just ran out of time...I had a boiled hot dog and a handful of macadmia nuts (finally finished the darn things!). I tried to get myself stoked for broccoli at the cafeteria, but eating plain old steamed veggies is a double-edged sword...on one hand, once you're used to them, the properly cooked stuff tastes ten times better. On the other hand, the properly cooked stuff tastes so much better that you don't want to eat the steamed anymore...that was me today, haha. So I said I would come back and roast some broccoli in the oven, but my dorm's doing an event and my kitchen is off limits! ARGH! So now I'm settling for a cup of bone broth and some tea, with about 1/2 cup of leftover collard greens.

 

So that'll still make 3 cups of veggies, hooray! But I'll have to try and make more veggies in the morning...stressFUL, so not hooray. Maybe I'll just do some sweet potatah until I can get some more greens cooked; that way I don't have to rush to class...honestly, rushing to class stresses me out so much! Man, even lukewarm, this bone broth is pretty nice. I was concerned about its gelatinous nature because it still looked pretty liquid to me, but it's pretty clear when I pour it that it's firmed up quite a bit, so I feel like I'm getting my nutrients. That's it for today, then.

Today was day 11.

 

For M1, I had a 3-egg onion omelet from Paleo Porn (3/4 cup of onion plus 1/4 cup leftover collard greens?). I was skeptical about its tastiness at first, because I was so tired of scrambled eggs and I didn't have ghee so I had to use coconut oil (which I could always taste pretty strongly in my eggs...). Buuut it was really delicious, and I may even make it for tomorrow too! We'll see.

 

For M2, I had turkey from the cafeteria (probably not compliant with sugar, but oh well; no other allergens) along with 1 cup of mixed veggies (broccoli, green beans, red peppers), five strawberries (usually four, but I only had five left and they were going south quickl, so I figured I would just finish them off) and 1 thumb of homemade mayo.

 

For M3, I had a can of tuna mixed with about 1.5 thumbs homemade mayo, half a sweet potato with salt and pepper, and 1 cup green beans/steamed carrots (mostly green beans).

 

Uuuggghh, I've hit such a place where I'm sick and tired of plain steamed veggies. I may switch back to ACV kale for the coming weeks instead of collard greens, because it's equally delicious and I need some variety to stave off not-variety. Also very tired. Very ready for bed.

Ugh, last night was one of the worst I've had during my Whole30. Woke up about 3 times, had trouble falling asleep...I can't tell whether it's because I was just silly enough to think that it's possible to get a good night's sleep on a college campus the night before Halloween (oh, the blood-curdling screams...) or if it's been what I've been eating, so I'll see how the next few nights go...

AGAIN, I woke up at least once last night. I went from sleeping through the whole night to waking up! Whyyyy?! Honestly the only thing I think I've done differently in the past few days is eating more starchy veggies, but I've heard they're supposed to help you sleep? I'll continue monitoring this before I decide to start changing things up again...maybe it's just really bad timing or something, with Halloween and now daylight savings time...

 

Anyway: yesterday. Day 12. Went alright. Haven't gotten my boundless energy back yet, hopefully soon.

 

M1: Onion omelet (3 eggs, 3/4 cup onion), 1/2 cup collard greens, and a sizable mug of bone broth (had to finish off the stuff in my fridge because it was starting to go south...).

 

M2: 1/4 of a chicken (palm-sized?) and 1.5 thumbs homemade mayo mixed into 1 cup of spinach (creamed spinach!). I tried with their asparagus, but no. Just no.

 

M3: Another 1/4 of a chicken, about 3/4 a sweet potato (half my own, and a spoonful of the school's), and half a grapefruit. Was going to come back from the store and cook some ACV kale, but it got too late too fast, so I forewent it.

 

Extra: I had about 1/8 a bottle of gingerade kombucha and a few spoonfuls of pico de gallo. Also tea. And water. The end!

Today was day 13 and I feel pretty rockin' about it~

 

For M1, I had another onion omelet (this may be a problem because I don't have nearly enough onions to do this every day...), so 3/4 cup onions and about 1 cup collard greens as well. OH and about 1/8 cup pico de gallo, SO GOOD. Next time, I may just put it directly into the omelet. 

 

For M2, I had a heaping bowl of cilantro slaw from the cafeteria (~1 cup?) and 3 grass-fed sausage patties with a cinnamon-baked apple (not on its own, but as a garnish to the sausage). I don't know if I should have had more fat with this meal, but I did eat most of the coconut oil from the apples (I always do) and I think sausages are fairly fatty, right? RIGHT?!

 

For M3, I had a HUUUGE plate (I think we're talking 1.5/1.75 cups here) of cilantro slaw from the cafeteria. I also found my new FAVORITE go-to meal (yes, it involves tuna). Might be worth noting, fellow tuna-loving college-peeps. I call it a deconstructed spicy tuna cake, because that's what it reminds me of and that's KIND of what it tastes like! So anyway, it's just a can of tuna, a packet of guac (or your own; Like 1/4 cup maybe? 1/8?), a good coating of cumin, chili powder, and ground chipotle (or your favorite Mexican-spice mixings), and then half a peeled baked sweet potato (just pop that sucker in the microwave; I peeled mine after). Top with pico de gallo or salsa, stir vigorously and ta-da! Deliciousness in a bowl~ And it only takes like 5-6 minutes (my other go-to meal took about 1, but 6 still isn't too bad, right?!)

 

So yeeeah, that it for me today. Still drinking tons of water and tea. Will probably have another cup of tea before bed. Adios~

Today was day 14 and I think it went rather swimmingly~

 

Just as a note, I DID wake up at least once again but I think it was closer to morning time if I remember correctly so maybe that's a good thing? 

 

M1: Onion omelet with about a 1/2 cup pico de gallo cooked into it and about 1/2 cup collard greens on the side. This was seriously THE BEST omelet I've had in the last two months. Maybe ever. The pre-cooked onions from PP's recipe were sweet, the salt in the egg was...salty, and the pico de gallo offered a sour and spiciness with just a hinto of sweet from the tomato...perfect. So, so perfect. Debating whether or not I'll have it again tomorrow morning or sausage instead. I went to the store and bought three more onions and another carton of eggs just so I could have the option, haha.

 

M2: A deconstructed tuna cake (same as described yesterday; so also half a sweet potato), 3/4 cup of green beans, 1/4 cup wax beans, and 1/2 cup carrots.

 

M3: Melissa's comfort noodles, (about 1.5 cups because I can't use a julienne peeler) and all I can say is wow. Probably the easiest and tastiest thing I've made so far. I did a lot of slurping. A lot. And groaning awkwardly because it was that good. I swear the noodles tasted like some delicious noodle-y dish I've had before but can't put my finger on. Homemade mac and cheese? Olive Garden pasta? Something fancy like that. I could feel my soul lifting. A hug in a bowl indeed. SO glad I have two more zucchinis, because I definitely want to make this again this week!

 

That's it; I also roasted some broccoli and sausage in the oven and I'm munching on it now while drinking a cup of sleepy time tea. A lot of water, as always. Dead tired, lotsa homework. I also had the brilliant idea of participating in NaNoWriMo (National Novel Writer's Month) this November. Because when I'm doing a Whole30 and finals are in early December, OF COURSE I have time to write a novel, RIGHT? Haha, haha, ha--no. But seriously, I'm about 2000 words in and having a blast, so I'll see how far I can take this.

I'm not sure how I missed that noodle recipe -- I've spent so much time looking at her blog, I would have thought I'd have at least seen it at some point. I have to try that, soon! And I know I have zucchini in the fridge.

DO IT. I don't wanna over-hype it or anything, but when she said it didn't taste like a bowl of zucchini and egg, I was skeptical (frankly, zucchini still terrifies me a little bit...). But she was right, and it wasn't too hard to make--I just had to endure the many jabs from my julienne peeler (but that's more my own incompetency than her recipe!)

 

Ah, thanks very much, I'm gonna need all the luck I can get, being behind by day 3, but I'm taking a few days to get in a good place in my homework, and then I'll try to aim for 2000 words a day to make up for it. I'm gonna do this! Yeeeah! But still, congrats on 15k words, that 15k more words than you had at the beginning of the month, and more than I've ever had invested in one place! Wow!

Today was day 15, and it went okay.

 

Woke up twice last night, I think. FRUSTRATING! But I think I'll give it until Wednesday to sort itself out. If not,t hen I'll try decreasing starchy veggies...maybe I was getting more than I thought? On the flip side, I didn't have a 2:00 slump today! Huzzah!

 

M1: An onion-and-pico omelet (3 eggs; 3/4 cup onion; 1/2 cup pico) and one head of roasted broccoli.

 

M2: Sausage, 1 pan ACV kale, and 4 strawberries.

 

M3: Pico omelet (3 eggs; 1/2 cup pico), half a sweet potato, and 1/2 cup veggie medley (tomatoes, yellow squash, zucchini, red and green peppers, onion).

 

Lotsa water, 1 cup tea later, and about a glass of kombucha? I don't know, I know I'm supposed to ease into the stuff, but it's really good.

Also, I just found out I left 5 dollars worth of tuna at the store. NNNNOOOOOOOOO! That's why the omelet for dinner. *sigh* I may have to make a mid-week run to see if they held onto the bag for me.

 

EDIT: So I was legit-hungry, no emergency protein and saving veggies for breakfast tomorrow. So instead of caving to the temptation to pick up a pack of pistachios, I had three strawberries instead. I don't have a fruit problem, I was just really hungry and no good source of food right now, I swear!

Today was day 16, and it went alright.

 

Woke up again a few times last night, oh well...really hope it sorts itself out.

 

M1: Onion-and-pico omelet, ~1 cup roasted broccoli.

 

M2: A chicken breast and about a half cup of green beans (I had to rush...) and 4 strawberries.

 

M3: A bag of leftover roast chicken (1-2 palm portions?), half a sweet potato, ~2 cups of green beans, and 1-3 thumbs of mayo.

 

Lots of water, tea. Oh, it was perfect hot-drink day so I made some weird unsweetened cocoa concoction with some cinnamon. Probably not great and may fall under the category of "satisfying chocolate-y desires", but it was a one-time thing.

So TWO days ago was day seventeen and I'll be quick, it went something like this:

 

M1: 3 grassfed sausage patties, apple cider vinegar-cooked kale.

 

M2: a roasted cod fillet with 1 thumb mayo, about 1/2 cup roasted tomatoes, 1/2 cup plain steamed carrots, 3 strawberries, and 1 cup steamed spinach with about 1 thumb mayo.

 

M3: a tilapia fillet with 1 thumb mayo, about 1/2 cup roasted tomatoes, and 1/2 cup roasted potatoes.

And yesterday was day 18 and it went something like this:

 

M1: 3-egg omelet with 3/4 cup onion and 1/4 cup pico de gallo cooked in and ~1 cup apple cider vinegar-cooked kale.

 

M2: A rosemary chicken breast from the cafeteria with 2 thumbs mayo, ~1 cup apple cider vinegar-cooked kale, 1/2 banana, and ~1.5 semi-closed handful of pomegranate seeds.

 

M3: Melissa's comfort noodles (so 1 cup zucchini noodles and 3 eggs), 1/2 a banana, and 1/2 a sweet potato with about 1/2 a thumb of mayo.

Today was day 19 and it was all sorts of awkward, so here we go:

 

M1: 3 HB-eggs from the cafeteria with generous squirts of mustard and about 1.2 thumbs of mayo (deviled eggs!)

 

M2: I tried sardines for the first time, but I was in a rush, and when I saw the backbones...nooope. Not now. Not when i'm in a hurry. Bones and guts freak me the heck out right now; it's something I have to work towards, I can't just go gung-ho! Instead I discovered one of the fancier dining halls on campus had delicious fish fillets and not-boring vegetables! :D So I had two-is fish fillets, 1/4 plate cute little potatoes, and 1/4 plate curried vegetables. Would have gone back for more vegs and tomatoes but they closed. Boo... Oh also, about 1.5 semi-closed handfuls of pomegranate seeds.

 

M3: Went to regular cafeteria, got a different (and less yummy) fish fillet, and then went to the store and ate about 3/4 a can of sauerkraut because they didn't have any decent veggies for dinner. 

 

In other news: my sleep is getting better! I don't wake up as much as I did those first few days and now I can actually get up when I need to 90% of the time! Huzzah!

RANDOM POST: Day 20 Celebration

 

I've had a busy week. Between cooking, writing, and classes it's been pretty hectic. So today I decided I would take a break, go out and have fun. It's almost a special occasion anyway.

 

See, today marks day twenty of my Whole30. For twenty consecutive days, I've been eating whole, nutrient-dense food, and I feel great. It may be day twenty of the challenge, but it's been over forty days since I said that I would see this challenge through to the end no matter how many times I had to restart. This has been one of the longest, most significant commitments to my health. And I think that's something worth celebrating. So I grabbed a friend, and we made a day out of...wait for it...

 

Clothes shopping.

 

Or rather clothes sampling? We went to JCPenny's and I piled the clothes onto my arms. Cute tops. Dresses. Even jeggings (with those sad, fake little front-pockets). Because I have a secret:

 

I love clothes.

 

But for the past six years of my life, clothes have had an additional price tag. It said: "YOU MUST WEIGH ____ TO WEAR." No cute dresses. No jeggings. No skirts. Just jeans and tops. Don't get me wrong; there's nothing with jeans and tops, but that was all I felt comfortable wearing. Because I didn't feel like I was good enough for anything else. I wasn't skinny enough for a dress. Even the sleeveless shirts I bought almost never left the hanger because I was mortified by the way my arms looked. I felt like if I wore anything else, people would whisper and say "Look at her! She thinks she can wear that?" It's really a silly fear, right? But it's a silly fear that has kept me from exploring such a basic outlet of my self-expression for years. And today, I fixed that. I tore off that price tag (metaphorically; I'm sure I would have gotten us kicked out if I ran around ripping off actual price tags) and I grabbed anything and everything I've wanted to wear but never felt I was good enough for.  I took them to the fitting room and I tried them on and it was beautiful.

 

I realized that I really could love myself.

 

And you know what? That self-worth is not tied to my weight or my complexion. It's tied to how I treat myself. And that's probably the most valuable thing the Whole30 has given me. I haven't stepped on the scale in weeks. I doubt I've lost a ridiculous amount of weight. I'm certainly not at the weight I once aimed for "to be healthy". But that's okay, because when I treat my body right, I look into the mirror and I don't just see my waistline—I see the happiness and energy my efforts have produced. For me, that's self-love. And that's good enough.

 

(TL;DR Went clothes shopping, tried on a bunch of stuff in a whirlwind of fabric, looked in a mirror, had some philosophical revelations, then said "Man, I look HOT.")

Today was day 20, and it went pretty well.

 

M1: pico-and-onion omelet (3/4 cup onion, 1/4 cup pico), 1 cup chai tea, and 1 bowl ACV kale ~1 cup

 

M2: 1 can tuna, 1/2 sweet potato, a few tablespoons of pico, 1.5 semi-closed handful of pomegranate seeds, and 1.5 thumbs of mayo

 

M3: 1 jerk chicken thigh, 1 thumb mayo, 1.5 cups green beans and .5 cup saurkraut.

Ooh! I hope you bought the red one! You look fab in it!

So nice to read your post. I've had a bit of an opposite day 20. I think I've got some sort of tummy bug as have had a sore tummy and hardly any appetite. Then to top it off, mentally I'm starting to get fed up with all the cooking and meal planning etc.

It was lovely to read your post and see how well it's going for you. Keep it up! (And buy the red dress :) )

Haha, I did actually buy the red one! The only one I got; it wasn't meant to be a shopping trip, but I really wanted a casual autumn/wintery dress. Man, I'm sorry to hear you're sick! Thought I did have fun, i too was a bit fed up with cooking, honestly. I took my friend to a greek restaurant in town and spent the whole time saying "20 is not the same as 30, 20 is not the same as 30", haha. Thanks, we can do it! Only ten more days!

Today was day 21, and it was a roller-coaster of ups and downs, stress, happy moments and creeping depressive feelings that always come with the weekends.

 

M1: 3 HB eggs with 1.5 thumbs mayo and a good squirt of mustard. 

 

M2: Baked tilapia filet with about 1/2 cup green beans, 1/2 cup broccoli, 1 thumb mayo, and 1 closed handful of pomegranate seeds.

 

M3: 3 slices of Melissa's cottage pie. Was definitely not SWYPO for me because I'd never had Shepherd's pie, or lamb at all for that matter. I also forgot to season the meat with the cumin and chili powder (I was doing a Mexican variation)--d'oh! So I just dumped it on top of the cauliflower mash and it still turned out great and yeaaaahhh...3 slices was probably too much for me. XD But it was so good, and I shared with a friend and still have tons of leftovers. I'm totally set for the week. Tuna, I'm so glad you're back on board, but your assistance may not be required after all...So for vegetables from that, probably like...1/2 cup cauliflower? Maybe a little less? But anyway, I also cooked a variation of my mom's famous veggie soup using fresh veggies rather than canned, and I must say it was a pretty decent alteration! Had tomato sauce, tomatoes, green beans, carrots, onion, garlic, two peeled white potatoes, two small zucchini, and a bag of sugar snap peas. Not bad! I had like three bowls--maybe like 2.5 cups? So maybe like 1.5-2 cups veggies? It also definitely would cover my starchy veggie intake because of the carrots and potatoes. Also sooooo many leftovers. And it's going to get cold this week, so it'll be perfect. Oh, soup had bone broth in it! Yummy!

 

So after that dinner I'm now stuuuufffffeddd. Of course, anything that says cooking takes an hour total means it will take me four hours...*rolls eyes* So you can imagine where my stress and depressive feelings came from, yeah? Yeah? Especially as I watched my growing mound of dishes...Darn, I just forgot I was going to slice up an onion for use in omelets this week. I might just have to go back, haha. But I've accepted my lack of productivity and will do a few necessary things tonight then go to bed--ready for this day to be over. I did finally get off my butt and go work in the university garden, though...that was a fun respite. Been a challenge to get all my liquids in today. Will probably have another waterbottle and some tea before bed.

Yesterday was day 22 and it was hectic.

 

M1: A pico-and-onion omelet (1 cup veggies) and a cup of chai tea wit coconut milk added.

 

M2: A palm-sized portion of leftover shepard's pie and a huge bowl of soup (~1-1.5 cup veggies?)

 

M3: A can of tuna mixed with half a sweet potato, spices, and 1.5 thumbs of mayo. Also another big honkin' bowl of vegetable soup (1.5-2 cups?)

 

Lots of liquids and tea (non-caffeine).

Today was day 23 and it was ssooooooo stressfullllll I could practically feel my hair falling out.

 

M1: A pico omelet (1 cup) and chai tea with coconut milk.

 

M2: A palm-sized portion of leftover shepard's pie and a big bowl of veggie soup (~1.5 cups?).

 

In between: A nice apple. (It's weird lab day, remember?)

 

M3: A little weirder, got a fish fillet from the cafeteria and ate with a thumb of mayo, then had half of my baked sweet potato with some mayo (.5 thumbs) and a few bites of salad.

 

Extra: I got hungry later at night so I had another palm-sized portion of SP and .5 thumbs of mayo, and a few bites of veggie soup.

 

Lots of water and lots of tea. I'm going to bed now. Good night!

Yesterday was day 24, and wow I can't believe I've been doing this for so long!

 

M1: A slice of leftover shepard's pie, some chai tea with coconut milk, and about 3/4 cup lyonnaise potatoes.

 

M2: A chicken thigh with 1 thumb mayo, 3/4 cup tomato, and 1/2 cup white potato.

 

M3: Can of tuna, half a sweet potato, 1.5 thumbs mayo, some spices, a spoonful of pico,

 

Night meal: a fairly huge bowl of leftover shepard's pie and a small-ish bowl of leftover soup.

 

...So I ate a lot yesterday, especially heavy on the potatoes. Whoops...but I was trying to finish off my leftovers because today and for a week now, I'll be doing a low-FODMAP diet to see if I can resolve some of the gut issues the Whole30 hasn't taken care of. I already ate a date, whoops, but everything else has been compliant! Huzzah! Onions, I'll miss you, old friends. D;

Yesterday was day 25, and it did not...go so great...

 

M1: A date and a cup of coffee with a little bit of cocoa powder.

 

M2: Half a banana, about 1/2 cup of yellow squash from the cafeteria, and about 1 cup of salad with a handful of olives and some red wine vinegar from the cafeteria.

 

M3: Whole banana, a can of tuna mixed with half a sweet potato, 1.5 thumbs mayo, and spices.

 

Night meal: a funky convenience salad that had a lot of freakish stuff I couldn't have, but I ate around it. From it, I had about half a medium-sized tomato, about 1/4 cup of olives, and about 1 cup of lettuce. No dressing or anything. Then i went to bed.

 

I was up early in the morning trying to finish homework and I didn't have time to eat, or shower, or anything...and it looks like I'm going to be in the same boat again today. Running off seven hours of sleep, and you could say "boo-hoo, I only get 3/4/5/6 hours of sleep every night." Well I would definitely stay up late to finish my homework rather than getting up early, but my body physically can't do it anymore. It just won't. And it's incredibly frustrating--I used to be able to stay up until 3 if I needed to! Now I can't even stay up until 12! I didn't have time for lunch either, obviously, or really dinner. I've been trying to finish an essay for a class that I know is going to be horrible, but the first draft is due today and I still have 1.5 pages of it to write and I don't want to be alive at this moment right now. Like, I don't want to die, but I don't want to be alive in this moment. I'd rather be alive in a different moment, you know?
