Ground chicken & potatoes - what to make??

I would cut the potatoes into 1" cubes, toss them in a compliant fat and some S&P and roast them at 450 until they are done (about 20-ish minutes).  While that's going on, sautee your ground chicken with some seasonings (I would pick garlic, ginger, S&P).  When the chicken is cooked, add the kale and cook until wilted.  Add your roasted potatoes, your chopped cherry tomatoes and your cilantro and cook until the tomatoes are a bit warm.


In another frying pan if you have eggs, cook them sunny side up or over easy.


Serve the eggs over the frying pan mess with the avocados on the side!

Easily a meal!


OR, make a burger out of your ground chix, top with sliced tomatoes and avocado/guac (mix in the cilantro to your mashed avo), serve with a  kale salad and roasted potato wedges. 



You could also make a salad out of the avo/tom/kale/cilantro

and serve it with a chicken shepherd's pie you make with your ground chix and mashed potatoes. 




Ever watch Chopped? I love these kinds of challenges.
