Wanted to know your thoughts. The problem is the tapioca flour and coconut flour that is included with the cauliflower to give the "muffins" their fluffy size and golden color. These flours are okay to use in browning meats or thickening a gravy, but their inclusion to achieve muffin status takes this recipe over the line into the realm of SWYPO. I almost simply referred you to another recent post where I approved a cauliflower crust, but when I looked at how this one was made, I think it is a problem for the Whole30. sarawh Posted October 20, 2014 Share Posted October 20, 2014 I haven't tried it but it seems to me you could rice the cauliflower mix with egg white seasoning and flaked coconut. I would chill it till it forms balls and then dip the balls in egg and roll in the coconut flower and then brown in coconut oil. It could work and be compliant.
