Dem
I have a dream of making a fresh spinach salad topped with either grapefruit or tangerine sections and some red onion. What kind of dressing should I make to go with it? I don't have any compliant bacon, so please don't suggest that. Thanks in advance!
Tina R
I love lemon and olive oil. Or you could use tangerine juice and olive oil. Also pecans are great on spinach salad. Enjoy!

Moderators ultrarunnergirl Posted November 19, 2014 Moderators Share Posted November 19, 2014 My sister-in-law makes an amazing orange dressing. I bet it would be perfect! -1 medium-large Navel orange, zestd and juiced - you should have about 1/3 c juice)-1 shallot (finely diced or minced)-1/4 cup vinegar of choice (champagne or rice wine vinegar are top notch)-1 tbsp Dijon mustard (make sure it's compliant)- pinch of salt to taste-fresh cracked blk pepper to taste-1/2 cup EVOOCombine all ingredients in mixing bowl then whisk EVOO into bowl. Enjoy!
IslandStyle
I made some with a cup of EVOO, 1/4 cup of balsamic vinegar, 2 cloves of garlic, about a tsp of rosemary leaves, a tsp of thyme, two dates, maybe a tablespoon of almond slivers. I put it all in my Vitamix and blended it well. I like a creamier dressing, and this was close enough for me. My husband liked it, too.
Dem
Thanks for the recipes. They both look great! I did eat it with just the juice from the tangerine, evoo, s and p. I think something creamier might be better.
