kellysensei
I'm planning on making the "No-Fuss Salmon Cakes" recipe from ISWF tomorrow. It calls for a cup of canned sweet potatoes, but the only canned ones I can find around here are canned in corn syrup. I don't suppose I can just rinse them off? Where can I get canned sweet potatoes without sugar? And if I can't get to the grocery store before tomorrow night, should I just steam and mash some "real" sweet potatoes I have? Or would butternut squash work?
Administrators ladyshanny Posted December 2, 2014 Administrators Share Posted December 2, 2014 Oh, for SURE you can use a real one! Do it in advance so you don't burn the crap out of your fingers when combining the "batter". You can also use canned pumpkin (not pie filling, beware!) or steamed, mashed butternut squash. GFChris
My local Whole Foods carries canned sweet potatoes without sugar. But yep, you can steam or roast and mash whole sweet potatoes that you have on hand.
MeadowLily
http://forum.whole9life.com/topic/2822-canned-sweet-potatoes-without-sugar/ Same recipe and discussion in 2012. You can't really wash that syrup out of them, they would fall apart easily.
kellysensei
Thanks for the replies! Canned pumpkin - that sounds strange but interesting in salmon cakes! I've got way too many cans of pumpkin in my cupboard, so pumpkin it is! Maybe I'll still steam some sweet potatoes and eat them as a side dish! Penneys525
I used jarred baby food sweet potatoes. Only ingredient listed was sweet potato. Worked perfectly!
