Meat - Fat on or off

I'm buying organic meat, some grass fed some grain fed. I know if I buy supermarket meat I should cut the fat off but should I do the same for organic meat? Should I eat it? I had lamb chops tonight and had some of the fat but left the rest (it really didn't look appealing).

Any advice would be appreciated.

My other questions which I forgot to include is when cooking meat should I cook it on a grill, I've been doing it in the frypan. I did lamb chops tonight in a fry pan and was thinking I should be doing it on the grill.

You can eat the fat of grass fed meat, but you don't have to. You should trim the fat of grain fed, feed-lot meat. It's your choice about pan frying or grilling.
