Coconut flour breading and beef ?

Today I made sliced eggplant rolled in a light coating of coconut flour topped with spinach and a homemade tomato beef sauce (organic beef, crushed tomatoes, onions, cumin, parsley, garlic, s&p). Is that an appropriate use of coconut flour?

Also, the beef is from my mom's farm. They raise cattle, grow all the crops that the cows eat. It just occurred to me that they are corn fed cows. That doesn't make a difference does it? I think not because I image it would be too hard to also monitor the food that our meat eats. But thought I would ask. I'm getting really into the research and thought process!

Yes that is a fine use of a coconut flour.

 

The beef is also fine. This is something for each person to consider for themselves. There is a lot to read on meat quality and how cow's raised on pasture and hay without grains are much healthier but for the purposes of the Whole30 you are fine eating corn fed beef if that is what is available to you and affordable to you.
