Lunch Ideas

My husband is going to be at a friend's house for dinner tomorrow so he needs to bring his own meal.  I'm thinking that a typical lunch brought to work would fit.  Whatever it is, he will take it from home in the morning, so it needs to be able to be packaged up all day (in a fridge at work) and then need minimal cooking/heating.  I just cannot come up with anything for some reason.

 

The lunches we've had so far are (today is day 10 for us):

 

Tuna salad with avocado

Soup

Beef Stew (I had this about 10 times and am totally sick of it)

 

Really, that's all we've had so far.  I'm bored with all of it, so I could use some lunch ideas as well.  I would use leftovers, but really, we just haven't had any.  Our dinners are pretty boring (meat and a vegetable) and we don't usually make extra because, frankly, none of it has been that great.  The only dinner I've really loved was the crab cakes we made last week.  Everything else has just been "eh."

Not so much for tomorrow night, but in general, you should check out The Clothes Make The Girl. Look for her Whole30 Food Plans, she's got three or four of them, or read her Method Behind My Madness post -- these describe how she cooks up enough food for a week, but in a way that gives you variety throughout the week, by cooking proteins, veggies, and sauces -- then you can mix and match these throughout the week, and while technically, you're eating the same things, you're not eating exactly the same things.  (If I weren't on my work computer, I'd link to this for you, but it's not cooperating. If you have trouble finding it, say so, I'll come back and link to stuff when I can get on my personal computer later.)

There are lots of things you can prep ahead of time. I have some sweet potato chili and some butternut squash soup in my freezer that I can just throw in the fridge to thaw out the night before

We do compliant meatloaf a lot here, along with meatballs and one yummy recipe I found is chicken and kale patties -- http://www.multiplydelicious.com/thefood/2012/06/sweet-potato-and-kale-chicken-patties/  these are like to die for!  There is some dijon mustard in these, so either find a compliant dijon (my local store brand is!) or leave out or sub regular compliant yellow mustard. So yummy! (can you tell I like these!) I like these cold or warmed up with mayo, lettuce and your standard burger toppings. Same with the meatloaf and meatballs. I also do a lot of roasted sweet potatoes. My husband is a local delivery driver (mass stops, so big rig) and I usually pack lunches up for him. Thanks everyone for the ideas! I have been in somewhat of a rut lately in general so I needed them. I have seen the chocolate chili referenced in a few places so I bought the ingredients for that last night and I'm going to make it this weekend. I may try a meat loaf too! I'm already all over meatballs; I made those last weekend and still have some left.

Anyway, I guess I need to get cooking! I just realized this morning that this is a three day weekend so I am excited.
