What's for Dinner?

I thought it may be fun and helpful to have a thread to share dinner ideas, recipes and some food porn, if you're so inclined.

I'm making pastured pork carnitas, I'm using the Rick Bayless method only my pork chunks are frolicking in a bath of garlic, lime juice, cayenne pepper, salt and black pepper.

For serving, lettuce wraps and a crema of avocado, lime and cilantro.

I made Slow Cooker Chicken Vindaloo, which is basically chicken smothered with a lot of sliced onions and spices and some vinegar. It was good, but not great. I may try the same basic recipe again with pork and see if I can get more flavor.

I browned some grass fed ground beef with onions, mushrooms and garlic. Then I added my fav marinara sauce courtesy of Rao's (can be bought at WF or follow their recipe sourced by Google). Then I poured it over a big pile of baked spag squash. Sprinkled some homemade chili flakes (a lot) that I made last week. Had 3 grilled shrimp on the side because I am trying to cut out that pesky 4th meal.

Oooh, what does ostrich taste like?

Andra, it's a red meat and when cooked medium-medium rare on the grill, it tastes like a mild, choice, cut of steak. But I couldn't say it tastes EXACTLY like beef by any means. I've only eaten the ground to date. Will try a steak one day. Of course, it will acquire some of the flavor of any marinade you put on it. I made a delicious veggie soup for suppper tonight out of the 8 oz. cooked piece we had leftover and threw in 3 c. chicken stock from my freezer, 2 cans diced tomatoes, the 2 pieces of grilled yellow squash, 1 carrot, some red onion and 1 c. cooked kale/onions/bacon I had leftover in the fridge. Mmm. Made a VERY good, hearty soup! :)

Last night I made http://fastpaleo.com/garlic-balsamic-pork-tenderloin/ with roasted brussels sprouts. I made two tenderloins and I have a whole one leftover so guess what's for dinner tonight? Although, I am trying to think of ways I could re-purpose the pork instead of eating it the same way as last night. Tomorrow I am roasting a chicken. I bought some zucchini today so maybe I'll saute that with some onions on the side.

I took some Key West frozen shrimp that I got from WF and defrosted it. Cooked it up in my NuWave oven for 4 minutes and then mixed it with some homemade mayo that I sprinkled Old Bay and Jalapeno Powder in. Put it in a little cup. I also grilled up a nice grass fed (not grass finished however :( ) sirloin steak and a bunch of grilled zucc and sliced heirloom tomatoes with a little blob of mayo on them. Sigh...perfect summer dinner.
