Cauliflower mash with a twist

I made mashed cauliflower today and wanted to jazz it up. I steamed it and added the ghee and coconut milk, salt and pepper, and then added a big handful of spinach, half a jar of sundried tomatoes, and a handful of pine nuts. After the fact it seemed to be missing something and I threw in a little dried basil, but it would be better with fesh for sure.

Next time I would use frozen chopped spinach and sundried tomato bits instead of halves, but this was pretty good. I bet it would taste awesome with a nice steak.
