Paleo coconut flour/coconut crusted "chicken nuggets"

I was thinking of making this recipe:

I was thinking although this is compliant, is it not allowed because it's re-doing a type of comfort food? It looks so yummy! I was thinking of also putting flaked coconut on it.

 

Does this fall into the same category as paleo desserts?

This is compliant by the rules. It might be SWYPO for some people's personal context. It wouldn't be for mine personally. Your mileage may vary.

 

 

 

In addition, context matters.  For example, the amazing fried chicken in Paleo Comfort Foods is a perfectly appropriate (and delicious) dinner choice while on your Whole30. I do believe coconut flour is permitted on Whole30 but personally I leave it out.  The coconut flour doesn't have gluten and it does have healthy saturated fats but at the end of the day it's like any other 'flour' a.k.a. concentrated carb powder.

 

From my experience, if you use a cast iron skillet and get it blazing hot, you can make those nuggets just as good without the flour.  Just get the spice rub you want on the chicken and give it an intense sear on all sides.  You will get a delicious 'crust' on the chicken.  If they are big nuggets, just finish them in the oven in the same skillet.  Substitute the coconut oil with avocado or refined coco oil so you can use the higher heat in the skillet.
