Tanya Posted February 13, 2015 Share Posted February 13, 2015 I've decided to give the Whole 30 to myself as my early Valentines Day gift. I spent the last two days food prepping and cooking so I could start today. I've made roast chicken, fish, cauliflower mash, zuccini bread, paleo cheese, apple butter and am currently curing my own bacon because I can't find any without sugar. For the next 6 days my food will be the same breakfasts, lunches and dinners. I've made things I really love so I know I won't get bored. This will be my second time doing Whole 30 with great success the first time around. Super excited I started today. Good luck to all taking on this challenge. The bread is made with 2 cups grated zucchini, 1 grated carrot( squeeze all excess water out) added home made vanilla extract, 150 g of ghee, zest of one orange, juice of that orange, 3 eggs, salt 1/2 c coconut flower. Mix and bake. Top with a TB of home made apple butter. As with the cheese, this is the best. It's garlic-chive zucchini cheese. I got it off Paleo Leap. No nuts just a lot of cauliflower, zucchini, scallions, water, coconut aminos, lemon, salt, pepper and garlic. Can't forget the gelatin. I know I'm not meant to recreate junk foods but I'm on this journey for more than 60 days and cheese was what I found hardest to mentally battle with my first W30. Continuing to eat your old, unhealthy foods made with Whole30 ingredients is totally missing the point, and will tank your results faster than you can say “Paleo Pop-Tarts.” Remember, these are the same foods that got you into health-trouble in the first place—and a pancake is still a pancake, regardless of the ingredients. And I don't know about your homemade vanilla extract, but they usually have alcohol, and are therefore out on a W30. Here's what the Can I Have list says: Vanilla Extract: No Honestly, we think this ruling is kind of silly (nobody uses vanilla extract for the buzz), but we must be consistent with the guidelines to avoid confusion. The vast majority of vanilla extracts you can purchase for home use (in-store and online) contain alcohol, and the rest contain sugar alcohols. And, since we ask you to exclude alcohol and all forms of sugar from your Whole30, vanilla extracts are non-compliant. (If you see vanilla extract listed as an ingredient, you can count that product out for your Whole30, too.) Tip: You can use 100% vanilla bean powder in place of vanilla extract. We use it in a 1:1 ratio in recipes (1 tsp. vanilla extract = 1 tsp. vanilla bean powder). (If it's important to you to keep them, perhaps what you're doing isn't a true Whole30, but instead a WholeTanya -- where you take what you learned from your previous Whole30 and set your own rules, which might be very, very much like W30 rules, but with a few tweaks. [/quote I'm trying to get extra veggies in everyday, so these are made with veggies no nuts. Also not calling it paleo cheese anymore, it's now zucchini terrine. Tanya Posted March 3, 2015 Author Share Posted March 3, 2015 I got a recipe for sardine zoodles and it was fantastic. Can't remember where I got it. This week, majority of my foods will be sardine zoodles, devilish eggs with a salad, fried chicken with kale chips, sweet potato with avo and eggs, cauliflower hummus with cucumber and eggs and a Vietnamese chicken soup with green peppercorns.
