Megtastic's Whole30 Log

megtastic

Recommended Posts

I read the book, I read the website, I read blogs of people who tried their own Whole30 and now I'm ready.  My mom and I decided to do this adventure together, which is good - it's nice to have someone else in on it, too.  She hasn't read the book, yet, and has been a bit resistant ("Are you sure that's not too much meat?"  "That's a lot of oil"). I'm working against 45+ years of low fat dieting, so I get it.... but I am sure.  I'm "measuring" - not obsessively or anything, but I'm certainly not DOUSING things in oil!  Tbsp and rough palm size measurements are actually quite clear.  She'll shake it off, though.  And at some point, she'll actually read the book!

Prep Work

This weekend we made our meal plan for the week and went shopping.  We bought the best meat and eggs we could find, tons of veggies and some new things (avocado oil!).  We went out to Whole Foods for the meat because I was certain we'd find grass-fed beef and pastured chicken there, but I was wrong.  I'm really bummed about that.  We did manage to find a farm for next week that checks all the boxes - grass-fed, pastured, organic.  They have chicken, beef and eggs.  Plus, they have a shop onsite that's open on Wednesdays and Saturday! We're headed out there this weekend.  Fingers crossed!

We cleaned out the fridge, pantry and freezer - threw out some stuff that needed to be tossed and boxed up the rest.  It'll either get added back in to the diet (unlikely) or donated after our 30 days are up.  I actually had to replace my multi-vitamin because I was taking one of the gummy vitamins.  I almost completely forgot!!!  We made clarified butter, mayo (which was fun and is SO good!!), hard "boiled" some eggs (by baking them in the oven - way fluffier and better that way!) and baked some chicken to have on hand.  We also cut bags and bags of veggies.  Dude.  I am ready for this week.

Goals

I took my "before pictures" last night - yikes.  Here's hoping my after pictures make me a little happier.  I'm mainly hoping to reduce my stomachaches and back pains and see if my skin issues clear up - I've had keratosis pilaris since I was 6 months old.  It would be awesome if I saw a reduction in that.  I mean, I live with it and it doesn't totally bother me, but I'd love to know what my skin looks like without it.  Another benefit I'm hoping for is better sleep habits and renewed energy - I've been exhausted lately and it's been really difficult to wake up in the morning. Also, I'd be lying if I said I wasn't trying to lose weight and tone up.  My brother is getting married in October and I need (note the use of the word need - not an exaggeration!) to look HOT for the wedding (I'm not relying strictly on the Whole30 for this though, I am continuing my daily workouts - that's a habit I started back in December).

And So it Begins...

Today is day 1!  I was up bright and early and ate breakfast right away, which is difficult for me.  I'm never hungry in the morning and I'm usually sick to my stomach.  I had 3 eggs (scrambled with tomatoes, green onions, spinach and olive oil), 1/2 an avocado and a banana at 7:20.  The 3 eggs might have been a bit too much - I didn't totally finish, but - It's 10:00 AM now and I'm actually getting really hungry.

Totally looking forward to lunch - about 4 oz of tuna mixed with 2 tbsp of homemade mayo, green onions and salt and pepper with tons of fresh veggies on the side.  I also brought two hard "boiled" eggs to eat pre-workout (about 4:30 or so).

Dinner tonight is going to be amazing - beautiful beef filets, green beans (with garlic and olive oil - YUM) and half a baked potato with a little bit of the clarified butter we made, followed by some fresh berries.

All in all, it sounds like an excellent day of great food and treating myself right.

I think I should've titled this something different - no "Prepwork and Day 1" at the end.  I'm sort of treating this like a blog and each "reply" the new post... but when I wrote the first post, I guess I thought it was going to stand on it's own or something... I don't know.  Anyway.

How did Day 1 go???

Day 1 went well.  I ate everything planned and felt satisfied - for the most part.  My drive from work to the gym was hard.  I was hungry (even though I ate my two eggs before leaving the office and it's a short drive) and when I get hungry like that I crave Peanut Butter.  I big spoon full of JIF Peanut Butter.  Sigh.  I spent the whole car ride arguing with myself (I mean, not out loud or anything....) and it was really, really, hard.  I couldn't even chew gum to keep my mind off of the Peanut Butter.  I didn't give in, though.  I made it though my work out and did not stop at the grocery store and buy the biggest jar of JIF they had.  That, my friends, is a big win.

I feel like I ate more than enough throughout the day with a good mix of protein, fat and veggie, but was definitely hungry. Dinner was later than I would've like - but so freaking delicious.  You guys, organic beef filets are A-MAZING. Seriously.

I drank about the same amount of water as normal through the day (which is quite a bit) and had some tea - but I had to (sorry if this is TMI) pee SO much... like every 5 minutes it seemed like.  My going theory is that there isn't any bread in my stomach to soak up all the water... That's scientifically sound, right?  Right.

I slept fine (despite waking up an hour into the night to, guess what, pee!) and woke up this morning quite easily.

How's Day 2 going?

Well, first of all - can we cheer that there actually is a day 2???? I mean, yay.  Ok, moving on.  Day 2 has been ok.  I worked from home today, so my schedule was a little different - a bit more flexible.  Here's what I've eaten so far and the plan for dinner.

Breakfast

Same as day 1 - 3 eggs (scrambled in olive oil, with spinach, tomatoes and green onions) with 1/2 an avocado and a banana.

This was hard.  I woke up sick to my stomach.  Ate at 8:00 AM, about 20 minutes after getting up, and couldn't eat all the food.  I left about 1/2 of the food on my plate and stuck it in the fridge.  I came back at 10:30 after working a bit and ate the rest.  I wasn't sick to my stomach anymore and definitely hungry for breakfast.

Lunch

Same as day 1 - 2 cans of tuna mixed with ~2 tbsp homemade mayo, tons of cold veggies on the side (tomatoes, celery, green, red and yellow peppers)

I ate around 1:30 and this was delicious and satisfying.  The thing is, I was hungry not very long after.  What the heck?  I couldn't possibly need more food? Could I?

Snack (or mini-meal post workout)

hard "boiled" egg, small handful of pistachios, tomatoes and celery

I totally needed this.  I was really hungry after my workout (lifting weights + elliptical.  Remember, brother's wedding is looming!).  I went slow and savored.  Finished about 40 minutes ago (5:15)  and I think I still feel satisfied.

Dinner (planned to eat about 7:30)

Chicken "stir fry" - chicken, tomatoes, green onion cooked in olive oil with fresh lemon juice, garlic, mustard seed, salt and pepper served over wilted spinach.

How am I feeling?

So, here's the thing.  I'm not sure if I'm hungry or if my stomach is just being weird (my stomach IS weird, it's kind of her thing).  It gurgles and grumbles and I feel achy/pangy... things I'd normally associate with hunger.  But maybe it's something different?  Maybe.  We'll see.  I'm going to amp up dinner a bit and see if that makes me feel better.  I feel a bit gassy/bloated... but that'll move on, right?  It gets worse before it gets better.  I had enough energy to sustain my workout and my work day without resorting to JIF Peanut Butter.  That is an excellent thing.

Day 3 was HARD...

But we made it through!  You know what really helped?  The Whole30 Daily.  I signed up for it and am so glad I did.  I was all distraught day 2 about how hungry I was and how much I was eating and blah, blah, blah - and then I read this:

"If you’re always hungry, it’s okay to eat more, because all of the food you are

eating is healthy! We’ll talk tomorrow about how to distinguish hunger from cravings,

but as long as you're not falling face-first into a pile of dried fruit or a jar of nut butter,

if you're hungry, eat!"

-Excerpt from Your Whole30 Daily: Day 3!

Listen to my body?  What?  That's insane, she's never right about anything!  Which is exactly the reason to do a Whole30, right?  Right.

Here's a rundown of food and general thoughts for the day.

Breakfast

3 hard "boiled" eggs, cold veggies (carrots, celery, bell peppers, tomatoes) and a banana.

I split breakfast around my workout - 1 egg and 1/2 the veggies before the gym and then the rest after.  The first 1/2 was around 8:00 AM and the rest was around 11:00 AM.

Lunch

Chicken breast, guacamole, cold veggies, blueberries and raspberries

I ate around 1:30.  Couldn't finish all of my guac... there wasn't enough chicken to go with it and it turns out I don't like avocado by itself... Which I'm kinda bummed about.  But, whatever.  There's plenty of food I do like, no use being sad that I don't like the idea of eating an avocado or guacamole with a spoon.

Dinner

Lemon-garlic-olive oil marinated Chicken breast, Cauliflower mash, cold veggies

So, this was actually amazing.  We used ghee and compliant chicken broth in the mash and it was awesome.  It didn't actually taste like potatoes, but it tasted really good - creamy and warm and just yum.  The marinade I made for the chicken was awesome, too - fresh lemon juice, olive oil, garlic and salt and pepper.  Yum. Oh, and we ate around 7 PM.

But... How did you feel?

Honestly, I mostly felt like crap.  I was really tired, but between the gym, meal prep, eating, meetings and an afternoon hair appointment, the opportunity for even a catnap didn't present itself.

I planned to hit the grocery store by my salon after my appointment to pick up more eggs and some lettuce for the rest of the week but before my appointment thought my resolve was too low... JIF Peanut Butter and ALL OF THE COOKIES would be mine.  Where would we be then?

I felt kind of uncomfortable all day and sorer from my workouts than I normally do.  On a bright side, the irritability I'd been feeling the last two nights around dinner wasn't there today - although we did eat a little earlier.

Stronger than I thought... and Fancy!

Turns out, an afternoon being pampered by the best stylist ever while drinking tea makes you feel awesome.  I was able to maneuver through the grocery store successfully and got the best stuff:

  • Fresh lettuce for dinner the next night and lettuce wraps on Saturday
  • green bell peppers
  • green onions
  • compliant Kale chips (I always burn kale chips - it seriously never fails)
  • pastured eggs(!!!! Couldn't even find those at Whole Foods last weekend!)

They also had the best meat selection.  This grocery store - that I normally shop in - was literally bragging all over the meat section about their responsible sourcing of grass-fed beef and pastured chicken (and other meat that I don't eat) all from family farms with mothers that loved them.*  How had I never noticed that before?

We have all of the fresh meat we need for the week, so I didn't splurge on any of that - but what I was thrilled to find was compliant Italian chicken sausage and TWO kinds of compliant hot dogs - beef and turkey.  Grass-fed beef stadium hot dogs? Um, yes please.

Also, in a rush of feeling fancy, I bought a bottle of Pellegrino (a glass bottle, not a plastic bottle - fancy, remember?) and served it that night in wine glasses with raspberries and lemons.  That was just the right amount of sparkle to make dinner special.

All in all...

I'm super proud of myself for getting over whatever was bothering me midday and basically making from lunch to dinner snack free!  I think that's awesome.

*This is my way of describing the kind of meat we should be buying to people.  Also, I think it's nice to believe their mothers loved them.

Ugh...  we're getting sick around here... Headaches, nausea, freezing cold, achy bodies - I'd blame the Whole30 and just keep on keepin' on, but it's been going around the family for awhile now.  Seems like it's my turn.  Luckily, the Your Whole30 Daily newsletter comes to the rescue again with advice on feeding a cold!  Among other things it recommended club soda/mineral water, scrambled eggs and coconut oil. So, that was my breakfast today.  But, that's a log for another post!  This post is about yesterday.

Breakfast

3 eggs (scrambled in olive oil), tomato slices, a turkey hot dog (sliced and cooked in the same olive oil as the eggs) and a banana

This breakfast was AWESOME.  The turkey dogs I got from the store the day before are totally delicious.  I was completely satisfied. We ate around 8:00 AM

Lunch

2 hard "boiled" eggs, Chicken salad (chicken breast, homemade mayo, green onions, dill, salt and pepper), cold veggies (peppers, tomatoes, celery, carrots), blueberries.

I split lunch up 1/2 and 1/2 between meetings - I had a long conference call over my normal lunch time - and it would've been too early to eat before and too late to eat after, so I ate the eggs, 1/2 the veggies and 1/2 the blueberries before the meeting - around 11:30 - and the rest after the meeting around 2:00 PM.  This worked perfectly.  The chicken salad was to die for.

Dinner

Ground turkey meatballs, homemade marinara sauce, salad with tomatoes, onion and homemade dressing (olive oil, fresh lemon juice, garlic, salt and pepper), sparkling water with lemon and frozen strawberries.

Dinner was great.  The meatballs were delicious and the sauce was outstanding - even if it needed some more salt.

How did I feel?

I felt fine.  Kept my level of hunger at bay, ate enough at each meal and was busy enough throughout the day to keep my mind off of the things I can't have.  I did take the day off the gym, though - and that seems to have been a good thing.  The plan was to be back at it today... but I don't think I can manage that.  Listen to your body, right?  Well, right now my body is telling me to rest...

Megtastic~  I am enjoying your posts!  I just started my W30 today!  Maybe you can tell me how you started your daily log?  I am having difficulties navigating this forum. Keep up the good work and I hope to soon be posting my yummy meals and progress!

You're doing great. I can totally relate to your disappointment in WF meat section. It's terrible, except the $$$$ grass fed beef at the counter. The only "level 4" poultry are the whole chickens.

Sometimes they have pastured pork chops and these are great. Once I was in there an someone had marked the grassfed beef at the regular beef price. I bought about six pounds of it, went back for more and it was gone.

Thanks for commiserating on the WF disappointment!  It's reassuring to know it's not just my WF that is terrible.  :)

Thanks for reading and the encouragement.

This is going to be a double post for Day 5 and Day 6.  I just didn't have time to post today until this late and it seems silly to save today's meals for tomorrows post.  Anyway... here goes.

Day 5 - Not Feeling So Good...

So, sick hit in full force today.  Thank goodness for work from home days.  I was exhausted and slept a ton.  Eating just wasn't a priority, but I forced myself to keep fed.

Breakfast

3 eggs (scrambled) with spinach in coconut oil and a banana

I ate this around 9AM.  It was good - satisfying.  Didn't upset my stomach.

Lunch

3 eggs (scrambled) with spinach and a cut up turkey hot dog in coconut oil, also a banana

I had this around 2PM.  This tasted really good. Again, wasn't really hungry.

Dinner

Leftover turkey meatballs in marinara sauce, salad with tomatoes and lemon/garlic/olive oil dressing, blueberries

I had this around 7PM.  Satisfying, just enough.  Totally not hungry.

I slept for a long time this afternoon - from like 3:30 until 7. I was in bed yesterday by 11:30 again, too.  So, pretty tired.

Day 6 - Feeling better!

Woke up feeling much better today, thankfully.  It was a busy day of shopping and prep.  We hit Sam's club, our local grocery store and the farm I found out about!  Oh, it's the cutest place with the best selection.  It's run by a family and the kids are so sweet.  I can't wait to try the meat we got.  It was priced really well, too.  We're really lucky to have this so close by.

Breakfast

3 eggs (scrambled) with spinach and a cut up turkey hot dog in coconut oil, plus a banana

I ate around 11AM (Yeah, I slept in....).  This is pretty much my favorite breakfast.  I had hot tea today, too.

Lunch

Leftover chicken salad with homemade mayo, dill and green onions, green peppers, pistachios, apple, orange

I split this meal around shopping.  Around 2PM, I had the pistachios and the apple.  Then ate the rest when I came home - around 4PM.

Dinner

Lettuce wrapped burgers (topped with tomatoes, onion, avocados, homemade mayo and compliant organic dijon mustard), homemade "chips" (white potato slices cooked in olive oil), pickles, sparkling water with lemon and strawberries.

O.M.G. This meal was so fantastic. There are no other words.  Everything was fresh, organic, homemade deliciousness. Definitely a winner.  (Picture attached, because - wow)

post-64340-0-89218300-1425187393_thumb.j

Preparation continues to be key

We spent our afternoon prepping food we got - baking eggs (instead of hard boiling), cutting veggies, cutting strawberries. Tomorrow we'll make a huge batch of Italian meat sauce for lunch next week.  I'm in the office for three days, so that will be an easy thing to take with me.  We'll also make more mayo and try ranch dressing, cocktail sauce and taco seasoning.  We'll be totally ready for the week then!

How am I feeling?

I feel pretty awesome.  I put on jeans today that I swear I wouldn't have been able to breath in last Saturday. I'm not dreaming about JIF Peanut Butter and I'm hardly daydreaming about chocolate cheescake anymore.  I have noticed significant breakouts (checkout attached image), or at least significant for me, but it's only day 6.  I'm taking this as detox.  Mom has also noticed some breakouts, but reports looser jeans and better sleep already!!  All in all, we're feeling awesome.

Random Side Note

I suffered a non-Whole30 related injury today.  I was opening a box containing my new 18lb kettlebell when the knife slipped and stabbed my other hand.  Yikes.  It was a total idiotic move and it hurts like crazy.  I am apparently a total baby when it comes to being stabbed and am not cut out for secret agent work.  At least not yet.  It is only day 6, though.   ;)

(Another double post.  My day flew by today and I never had a chance to log yesterday!)

Day 7

END OF WEEK 1!!!!!!!  All I did on day 7 was cook for the week, eat Sunday dinner with the family and "workout" with my new kettleball.  That's in quotes because it was my first workout and I barely did 10 minutes.  But oh wow.  I knew I was gonna feel it the next day!

Breakfast

3 eggs (scrambled) with spinach and a turkey hot dog in coconut oil, potatoes and onions cooked in ghee, strawberries

About 11:00 - good, as usual.  Totally my favorite.

Lunch

Shrimp, homemade cocktail sauce, bell peppers, pepitas, blueberries

About 2:00 - we got the same shrimp we always order for holidays and it was like a special occasion.  This was a very nice lunch to have at the end of week 1!

Dinner

Salmon (baked in packets with olive oil, dill and lemon), roasted asparagus and roasted sweet potato

About 7:30 - this is my favorite way to eat salmon.  Also marked my the first time I ever had sweet potato.  It was ok.  I don't see what all the fuss is about, but I don't hate it.  I'll definitely have it again.

Day 8

First day, new week!  I'm SORE.  That kettlebell "workout" kicked my behind.  But I feel good.  Really good.  I was satisfied all day.  A bit long between breakfast and lunch, but it wasn't too bad.  I was just starting to feel "starving" when it was finally time for lunch.

Breakfast

2 eggs (scrambled) with spinach, green onions and a turkey hot dog in cooked in ghee, banana

About 7:30 - This was ok.  I like it way better without the green onions.  Which is weird, because I love green onions.  But, apparently my favorite way to eat eggs is with spinach and turkey hot dogs.  Go figure.

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas), bell peppers, homemade applesauce

About 1:15 - This was delicious!!  Everything was homemade.  How cool is that?  I was in the office today and ate lunch with coworkers in town - no one asked about my delcious, homemade lunch, but I SO wanted to brag.  :)  I was completely, 100% satisfied until it was time to work out!

Pre-workout

2 hard boiled eggs

About 4:30 - this definitely hit the spot for my workout, which was 40 min on the elliptical.

Dinner

Sunflower seed crusted chicken breasts, green beans, orange

About 7:45
This was really good!!  I basically breaded the chicken in crushed sunflower seeds.  Next time i'd add more seasoning - it was a little bland - and cook it for a bit less time - it was a touch overdone, but delish.

Now, to bed.  The second week of Whole30 has kicked off so well, I don't want to spoil it by staying up too late! :)

You're rocking it!!  Yay for looser jeans!!  When you are annoyed with WF just remember that you're lucky to have one.  I live in a small town (population 5,000) so I'm stuck with regular grocery stores although I will say that they are stocking more "good stuff" all the time.  Fortunately, my husband is a deer hunter so I have a freezer full of  grass fed venison.  Keep on keepin' on!!

Wow.  Where has this week gone?  It's just flown by in a blur of meetings, naps, (totally compliant) meals and workouts... I don't think this post will be very flowery as I'm gearing up for another meeting and have 3(!) days of meals to log.  So, without further ado, let's just cover what I ate.

Day 9

3 eggs (scrambled) with spinach, and a turkey hot dog in cooked in coconut oil, banana

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas), bell peppers, homemade applesauce

Dinner

Lemon-garlic-olive oil marinated Chicken breast, baked potato, salad (mixed greens, homemade ranch dressing, tomatoes), orange

Day 10

Breakfast

3 eggs (scrambled) with spinach, and a turkey hot dog in cooked in coconut oil, banana

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas), bell peppers, homemade applesauce

Snacks

Pepitas, dried pineapple

Dinner

chicken breasts, potatoes and shallots fried in ghee, green beans, orange

Food is good, but how do you FEEL?

I feel ok. Yesterday (Day 11) was hard.  My period hit me and I'm really run down.  I understand that processed junk and whatnot actually makes you feel worse in normally situations, but not when I have my period.  Cookies, ice cream and candy literally make me feel better and it was REALLY hard not having them yesterday so I snacked a bit on nuts and dried fruit.  I didn't over do it, but I wanted to.  I really wanted to.  Honestly, I wanted to drive to a custard place, a gourmet candy place and the grocery store and spend about a $100 on junk food, but I didn't. So, yay!  I still feel pretty yucky today, but we'll see.  Honestly, I'm not used to feeling like this around my period.  Cramps, yes.  Cravings, yes.  But so tired and worn out, no.  So this is weird.

But, all in all, I'm ok.  And it's day 12!  So that's cool.

Megtastic, congrats on getting to day 12! I'm only on Day 4 and am solidly in the Hangover phase. I've had a lifelong love affair with all things sweet and full of sugar. Last night I even dreamed of eating a pint of ice cream! I just keep telling myself that I am changing my life for the better and I read through the forum and find solidarity in other's experiences. (My boyfriend is doing in too and he's all like, "I feel great! No side effects". Jerk. ;) )

I hope you'll keep up your blog! I enjoy reading it!

Thanks!  Glad you like reading - it's been really helpful writing it.  Another way to stay accountable!  I'm sorry the hangover phase is so rough - I've had a lifelong love affair with sugar, too - as you can tell by my daydreams of JIF peanut butter and cheesecake - and know how hard it is.  You'll get through it and feel AWESOME!!!  Here's to the other side.

I'm not sure why I can't get in the hang of posting every morning.  I really like doing it - I know I'll want to have a log to look back at - and it's so much more valuable to write right away... but I just get distracted.

Anyway, I left off last time on day 11.  Today is day 15!!!!!!!  Which means, once I go to sleep tonight, I'm HALF WAY THERE! Which is awesome.  These last few days haven't been without challenges, though.  Here it goes on my breakdown of meals:

Day 12

Breakfast

3 eggs (scrambled) with spinach and cooked in coconut oil, banana

I had breakfast around 8AM.  Always love this.

Lunch

Leftover taco salad (homemade taco seasoned ground turkey with guacamole, tomatoes and green onions on a bed of romaine lettuce), homemade plantain chips, blueberries

This was super good.  I ate around 1:00 PM.  I was really hungry and this totally hit this spot.  This homemade taco seasoning (just don't use the sugar) is awesome!!

Dinner

Filet mignon, baked potato, salad, orange

We at around 7:30 PM and it was delicious!  Fancy and so, so good.  We've been getting these organic white potatoes that are actually kind of sweet - they are SOOO good.  Oh my goodness.  Also, our meat from the farm?  Oh my gawd.  To die for.

Day 13

Breakfast

3 eggs (scrambled) with spinach and cooked in coconut oil, banana

Always yummy.  I had breakfast at 9:30 AM

Lunch

Shrimp, raisins

I ate at 3PM.  I screwed this lunch up.  I was supposed to bring homemade cocktail sauce, HB eggs, some pepitas and some peppers with me to go with the shrimp i bought at the grocery store, but I forgot.  And so I ate shrimp plain and raisins in my car way too late.  Oh my god.  Walking around the grocery store that day was awful.  I almost ate a million different things.  Almost being the key word.  Almost - but didn't.  Bad lunch, though... thank goodness for dinner being so awesome.

Dinner

Lettuce wrapped burgers (topped with tomatoes, onion, homemade mayo and compliant organic dijon mustard), homemade "chips" (white potato slices cooked in olive oil), sparkling water, strawberries.

We ate around 8PM. This is the best dinner!  We use Boston lettuce and it makes the best "buns" - so good!!!

Day 14

Breakfast

3 eggs (scrambled) with spinach and cooked in coconut oil, banana, pumpkin patties

We ate breakfast at 10am when I finally got up.  Um, pumpkin is not sweet.  At all.  We made these cute little pumpkin patties (pumpkin mixed with egg and seasonings) and they smelled so good - but they did not taste good.  They tasted like dirt.  We're going to try them one more time with a banana mixed in, maybe that'll make them taste better.

Lunch

Cold chicken, hardboiled egg, homemade dijonaise, kale chips, peppers, dried pinepapple

I had lunch at 2PM before shopping. This was beyond good.  The end.

Dinner

Lemon-mustard chicken (with cherry tomatoes and green onions, cooked in olive oil) served over spaghetti squash, strawberries

We had dinner at 7PM.  Delish! The mustard really makes a difference.  I tried this before with just mustard seed powder and it wasn't nearly as good.  Also, spaghetti squash is kind of awesome.  Who knew?

Snack

Pepitas, orange

I ate this around 9PM - I totally had the munchies for some reason!  I tried to fight it, but yikes.

Day 15

Breakfast

3 eggs (scrambled) with spinach, cooked in coconut oil, banana

I had breakfast at 8:15.  It was good.  Missed my hot dog, but we finally have them again, so tomorrow!

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas), bell peppers, blueberries

I had lunch at 1 PM.  It tasted great, but I'm not feeling so well... I think the ground meat we got from the farm was a little too fatty this time.  Made for too rich of a sauce, maybe?  Next time we'll order the ground sirloin and see if we notice a difference.

(Future) Pre-Workout

Two hardboiled eggs

I'll eat these around 5 PM, after my last meeting, just before I leave the office for the gym.

(Future) Dinner

Pot Roast (English roast, onions, potatoes, carrots), orange

I'll eat this around 8:00 PM.  And that'll be my day!

Workin' it Out

I've been trying to keep up my workouts, but I was really knocked on my butt by my period this month and kind of slacked off these last few days.  I didn't work out on Friday or Sunday, but did on Saturday and will today.  These workouts include 40 minutes on the elliptical and a 10-15 minute kettlebell routine.  I definitely skip a day between KB workouts because these KICK MY BUTT.  Like, no joke.  But, I do try to hit the elliptical daily.  I like to watch an episode of Supernatural (~40 minutes on Netflix) and can very the intensity depending on my goal for the day (fast sprints, going backwards or just slow and steady).  The goal for the last two weeks of this Whole30 is to keep up the daily elliptical... I'll have no more period related excuses, so I should make it.

So, How am I Feeling?

Right now, not really that awesome - I have a tiny bit of heartburn and a bit of a stomach ache.  But in general, I'm feeling great.  I'm more focused at work and I'm fuller longer throughout the day.  This alone is worth the work!  I'm still not seeing magic in my skin or hair, but they say somewhere in all this info that some people don't see the results until the end or even beyond a bit and I'm willing to be patient.

Also, a tiny bit premature (8 hours), but here's my 1/2 way point celebration:D

I'm trying not to get cocky, but this is going fantastically well.  My hair looks great.  I feel great.  It's been a little more than two weeks and my Mom and I converts.  Let me cover yesterday's food and then we'll talk more about that...

Day 16

Breakfast

3 eggs (scrambled) with spinach, cooked in coconut oil with a turkey hot dog, banana

Breakfast at 8:00.  Thank goodness for the hot dog.  Yum!

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas)

I ate lunch at 1 PM.  It was still a little too rich, but it tastes good.  We're definitely going to get the more lean ground beef from the farm next time and I need to make more ranch dressing. I love that stuff!!

Post Workout

2 hard boiled eggs, homemade dijonaise, pepitas, raisins, carrots and celery

I earned this mini-meal.  I kicked my butt at the gym and was HUNGRY.

Dinner

Leftover pot roast (English roast, onions, potatoes, carrots), orange

We didn't eat until 8 PM, but I wasn't terribly hungry.  It tasted good to me.

So, Converts, huh?

Yep. Mom and I are complete and total converts.  Mom went to the doctor on Monday and the doctor was raving about how good she looks and how much smaller her stomach is.  That's where she's carried her weight for my whole life (she was super skinny as a kid and young adult) but these last couple weeks have really chiseled away at her and she's looking great.  Her doctor asked what she's been doing and immediately went to the Whole30 website.  She said she had many patients this plan could help.  How awesome is that?

Planning Ahead

We have a family vacation coming up and have already been talking about how we're going to handle it and it doesn't sound scary at all!  We'll be staying at a condo in a little beach town, so buying healthy food will be easy and we're driving so bringing things we've prepared in advance shouldn't be a problem.  I'm also planning on bringing my kettlebell because I'm obsessed with it.

Successful Outing

I went out last night with some girlfriends and one of their kids.  It was dinner time for my friend and her boys, but way too early for me so I just had tea and was totally, totally fine!  It wasn't even hard.  I just enjoyed being with my friends and laughing and being entertained by the boys.  My girlfriends were interested in hearing about the Whole30 and we talked along time about homemade mayo and the possibilities of that - different flavored mayo and aioli we could make and all that.  It was a good night.   :)

Yesterday was another excellent day.  Got my workout in and made it through a bunch of meetings at work.

Day 17

Breakfast

3 eggs (scrambled) with spinach, cooked in coconut oil with a turkey hot dog, banana

Breakfast at 8:30.  This is seriously my favorite breakfast.

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas)

I ate lunch at 2 PM.  Running a little late from working out.  Had to squeeze lunch in before my meeting at 2:30.

Dinner

Nom Nom Paleo's Cracklin' Chicken, roasted asparagus, baked potato with ghee, orange, raisins

We ate dinner at about 8:15 PM.  It was pretty good.  Long story short, I don't think I like chicken thighs, but I loved the salty crispy chicken skin.  I think we're going to try it again with skin-on chicken breasts.  I was super impressed with myself that I successfully made the dinner. I de-boned the chicken thighs and cooked them perfectly.  I mean, seriously.  The orange and raisins tasted good after the salty dinner, but I need to be more mindful of the fruit I'm having before dinner.  My orange has been lovely, but no raisins with it.  That's unnecessary.

So, how am I feeling?

Still really good.  Nothing new to report, though.  Just plugging along.   :)

I am sore today!  Had a tough workout yesterday (elliptical + weights), but I do feel really good. Here's what I ate yesterday and today to keep me going:

Day 18

Breakfast

3 eggs (scrambled) with spinach, cooked in coconut oil with a turkey hot dog, banana

Breakfast at 8:30.  It's just so good.

Snack

2 hard boiled eggs, raisins

I had this just after my workout - about 10:30.  It really hit the spot.

Lunch

Italian meat sauce (ground beef and homemade marinara), salad (mixed greens, homemade ranch dressing, tomatoes, pepitas)

Ate lunch around 1:30.  Last day of this.  We're having it for dinner tonight (a fresh batch) and after that, I'm going to need a break from it for a week or two.

Dinner

Taco salad (Ground turkey with homemade taco seasoning, tomatoes, lettuce and green onions), guacamole, homemade plantain chips, strawberries

We had dinner around 8PM.  This was sooooo good and there's totally enough for leftovers.

Day 19

Breakfast

3 eggs (scrambled) with spinach, cooked in coconut oil with a turkey hot dog, banana

Breakfast at 8:30. What else is there to say about this?

Lunch

Taco salad (Ground turkey with homemade taco seasoning, tomatoes, lettuce and green onions), guacamole, homemade plantain chips

I had lunch at 1:30 PM.  Yummy leftovers even better than last night!

Snack

Guacamole and plantain chips

I'm eating my snack now (about 4:30) and will head to the gym right after my last meeting around 5PM.

Dinner

Italian meat sauce and Zoodles

We'll have dinner around 8PM.  We made the Zoodles (zucchini noodles) last night.  They are so cool.  Can't wait to try them.

So, How am I Feeling?

I'm feeling pretty good.  I'm tired now... feeling a bit rundown, but I think I need more sleep.  I'll definitely be focusing on that next week.
