I would personally believe it to be fine, no different than putting, say, avocado on your chili as the fat. If you have a pretty hardcore sour cream issue and it's just going to make you miss the cheese that is usually underneath the sour cream then it's probably not right for you. I'll stay out of the SWYPO debate, but I will say that not all coconut milk will separate like the recipe directs. I tried to do this with a can of Thai Kitchen coconut milk once, but it wouldn't fully separate; I was told that the guar gum, which is a Whole30-compliant additive, keeps the water and cream from separating. That's what I thought too, but the ricotta "cheese" that is on the Nom Nom Paleo site for the "Devils on Horseback" is actually approved by the Whole30 crew. http://forum.whole9life.com/topic/24365-cheese-substitute-question/?p=259803 I personally don't think that making nut cheese is in keeping with the spirit of my whole30 and for me, that quantity of nuts is a disaster for me. I would probably make this sour cream though because it's a good fat and could add a new flavour dimension to some meals. Not because it replicates sour cream. But it doesn't truly fall under SWYPO, because you're not recreating a sweet treat. Use sparingly, as a condiment, it could work perfectly as your fat like the linked recipe does. Even moderators sometimes have trouble with the SWYPO questions -- the cheese substitute in particular has been discussed pretty thoroughly. Officially, the cheese substitutes are allowed on the Whole30. However, everyone is always encouraged to think about their own relationship to food and how these foods might affect them. If you make the Devils on Horseback for a party, and you have a couple -- that's fine. If you make a bunch of them, planning to have them occasionally throughout the week, but instead eat the whole pan of them in a day -- probably not a thing you need to make again during your W30. (Also, if you have Nom Nom Paleo's cookbook, she has a list on her website that shows all the recipes that are Whole30 approved that you can download and print, so you know for sure which recipes are okay.) Here we on a site in which the first lines of information are: "Yes: Eat real food. Eat meat, seafood, eggs, tons of vegetables, some fruit, and plenty of good fats from fruits, oils, nuts and seeds. Eat foods with very few ingredients, all pronounceable ingredients, or better yet, no ingredients listed at all because they’re totally natural and unprocessed." And here are the points from the discussion that stand out to me: 1. The original poster asks about "fake" sour cream (their words) 2. The original recipe page opens with "I’ve been longing for sour cream" (I realize this is NOT the original poster saying this), so this tells me this is sort of a paleo-fied food creation 3. The sour cream is compared to other SWYPO/no-brakes types of foods 4. Another reply points out that the major ingredient is commonly found with additives (compliant or not) 5. Then there is a suggestion of "use sparingly" All good advice, lots to think about here. But at the same time to me these are all red flags. And when I see people trying so hard to find replacements made with technically complaint ingredients, I have to wonder about whether that food should be OK on a Whole30. I guess it comes back to what the original poster wants to use this fake sour cream for: a replacement for sour cream on a potato or taco, or a source of fat for a meal. If the latter, I like the avocado idea. There's no debating the health benefit of the avocado, maybe mash it up with some vinegar to get that flavor? If the former, I'd say skip the 'sour cream'. If you're in a Whole30, it's just for 30 days, you can live without this. If you're post-Whole30, then you can judge this for yourself as you've experienced the process so far. Again just my opinion.
