decker_bear Posted March 12, 2015 Share Posted March 12, 2015 So tonight I'm going to have an hour from time time I walk in the door to get dinner on the table AND eat before we have to leave again. I haven't done a stellar job with meal prep this week so I'm in a bit of a pickle. Most of the time it takes me close to an hour just to MAKE dinner, so I'm in panic mode. I have a little bit of cooked roast, a little bit of cooked ground beef, a few eggs and everything else is frozen. In the fridge is cauliflower, broccoli, asparagus, beets, kale/spinach mix, onions, sweet potatoes, avocados, red potatoes and carrots. I have some homemade mayo and the usual staples like coconut milk, olives, artichoke hearts, tuna (which we had last night) etc. If it were just me, a soup or chili is an easy option. My BF says "soup is not a meal" and gets testy if I try. I need something hearty, like maybe a casserole of sorts, that I can get on the table in about 30 minutes. Ideas? Ready? Go! Not sure how many people you are feeding or if you need leftovers for lunch the next day. But I would probably super thin slice the potatoes, fry them in a screaming hot skillet with some oil until they are brown and crispy. Then I would add the beef and spinach/kale mix to the pan and cook it down a bit. You could also throw some chopped asparagus in for extra veggies. Then, dump a bunch of scrambled eggs over it and let it cook until it sets. Top it with some avocado and some raw carrots on the side. Yum! Tina R Posted March 13, 2015 Share Posted March 13, 2015 It is probably to late but you can also do a ground meat stir fry. Add some compliant fat to a pan and add chopped veggies. Stir fry until mostly done. Add any ground meat to the pan. Add some salt pepper and any other spices you like. Cook until meat is done. This can take as little as 15 min. decker_bear Posted March 13, 2015 Author Share Posted March 13, 2015 Turns out I had less in the fridge than I thought, so it was tricky! I was totally looking forward to the fritata, but there wasn't enough eggs. Blast not prepping better! I ended up boiling carrots and potatoes, sauteeing some asparagus and onions, then mixing it all together with a can of coconut milk, some diced tomatoes and crushed dried mushrooms. I chopped the roast up into tiny pieces and threw in what was left of the ground beef. I added a splash of apple cider vinegar, coconut aminos, sea salt, garlic powder and a whole bunch of curry powder. It wasn't my finest creation, but we didn't starve. The dried mushrooms absorbed enough of the wet stuff that it wasn't "soup." The feedback was, "It's kind of an odd combination of stuff, but it was tasty."
