Yesterday I started my first Whole 30! I have done Paleo in the past so I kind of knew what I was getting into. :) I also have been steadily ramping up my veggie intake over the past few weeks for general health purposes. Sunday I followed the general prep idea laid out by Mel at www.thegirlmakestheclothes.com so my fridge is full of healthy stuff just waiting to be thrown into a skillet. I even made her pad Thai recipe for dinner last night and it was amazing! Yesterday was a super busy day at work, though. My blood sugar got so low I was afraid I might pass out. So I grabbed a can of coconut water (with pulp) and felt much better. I made it through the day and made sure I ate enough in the evening to make it through until morning.

 

Today I woke up feeling pretty good. I had my lunch and snacks ready to go, did my hair and makeup without incident (sometimes a bad hair day really is caused by bad hair!), and grabbed some hard boiled eggs for breakfast. But once I got to work I have been feeling a little out of it. Not bad, just having a hard time focusing. So now I know I need to pay more attention to details while I adjust to this eating style. I'm now about halfway through my afternoon and still a little loopy. I also feel like I'm hungry even though I ate a lot for lunch and I still feel the food in my tummy. I think it may be that I didn't eat enough carbohydrate to register as "full" so I'll probably have a snack soon. I am sneezing a lot today and a little curious if that's a normal part or just my reaction to the California spring weather (flowers, grass, breezes). In any case, I think this is a good thing to do and I am looking forward to better health!

Day three is going great! I have a slight headache still from yesterday, but I am feeling good. I think having Aidelle's chicken apple sausages with my hard boiled eggs helped a lot. Yes, I know I'm weird. But I have no problem eating the sausages cold right out of the package. :) Starting my day off with lots of food and a can of coconut water set me up for a much better day. Lunch was left over "taco salad" which consisted of ground beef with onions, garlic, and cabbage, chopped cucumbers, and a homemade cilantro lime chipotle dressing. I bought a fresh box of baby lettuce to go with it. Delish! I just had a mid afternoon snack of some roasted sweet potato pieces with about half a tablespoon of coconut oil with some cinnamon and salt. My favorite! I think for dinner tonight we might have turkey with Brussels sprouts and spaghetti squash, olive oil, and garlic. Sounds pretty good, huh? I think it will be wonderful!

 

I am feeling a distinct lack of dairy and sweetener in my life. When I first went Paleo a few years ago I ate dairy and honey or maple syrup. I had a little dessert I would make myself with whipped cream, cream cheese, vanilla extract, shredded or flaked coconut, and mini chocolate chips. It was like cannoli without the cookie. So good! I am seriously in the mood for something sweet. Also cheese. Oh the cheese. But for now, I'm happy with what I have. Applesauce! :)

 

Yesterday ended rough for me. I think I was too hungry and my blood sugar was too low. I got a headache at work that got so bad I had to lie on an icepack for a couple hours to get some relief. I ended up falling asleep, which I hardly ever do, and then had a less restful night than usual. But I only have an hour left of work for the day and I can relax when I get home. I love having so much great food already prepped and ready to go. It makes life very easy. And I also have a wonderful husband who has no problem throwing stuff into a frying pan and cooking until it smells and tastes great. I am loving life right now!
