SO GOOD!!! Chicken with Creamy Sundried Tomato Sauce

So this recipe looked delicious: like REALLY delicious.


Obviously, heavy cream and parmesan are out, so I tweaked the recipe - take out the bad stuff and substitute with 3/4 cup of coconut cream... CRAZY GOOD!!  (It goes without saying: brown the chicken in ghee.)  You don't miss the cream and parmesan at all, and you don't taste the coconut - you just get the creaminess.


I made it for company and they went nuts over it.  Making it next time we have people for dinner too (don't judge - they don't know each other ;) ).
