To clarify the ghee smell issue - I make my own and it really doesn't have much of a smell. If it does, I'd say it smells like butter. If you've bought a traditional Indian brand, it may be made from buffalo milk. I believe the smell also changes dependent on the length of time the ghee is cooked.

I realize that this is a little late, but I'm hoping it's helpful for someone...a good substitute for coconut milk is cashew cream. I used it in my coffee in the beginning b/c I don't like the taste of coconut milk in coffee. Here's how I make it: soak 1 cup of raw cashews for at least a few hours, or overnight. Drain, add cashews to blender and add 1 cup of fresh water (not the soaking water). You can add a little vanilla and/or cinnamon if you want, but I just leave it plain. I am now suspecting some type of coconut allergy, so I am going to avoid all coconut for the next week or so (I'm on day 18). I am drinking my coffee black with just cinnamon now, but I am using the cashew cream in other recipes. It has just about the same consistency as canned coconut milk (although you could play with the amount of water to find the consistency you want), and the flavor is more neutral in my opinion. A teaspoon or so beaten into eggs for scrambling is excellent, and makes for nice fluffy scrambled eggs. I hope that is helpful! :)
