I see so many wonderful recipes that use coconut - oil, milk, etc. I am allergic to coconut and I'm wondering if there are any good substitutions I can use?? Thank you! It's difficult to do any of the "creamy" type recipes without full-fat coconut milk. I will keep looking and see if there are any other replies to this topic. Thank you so much again! I tried cooking my back bacon in it the other day and the smell totally turned me off. Are some brands better than others? Robin Strathdee Posted September 2, 2012 Share Posted September 2, 2012 To clarify the ghee smell issue - I make my own and it really doesn't have much of a smell. If it does, I'd say it smells like butter. If you've bought a traditional Indian brand, it may be made from buffalo milk. Karin Cournoyer Posted November 14, 2012 Share Posted November 14, 2012 I realize that this is a little late, but I'm hoping it's helpful for someone...a good substitute for coconut milk is cashew cream. I used it in my coffee in the beginning b/c I don't like the taste of coconut milk in coffee. Here's how I make it: soak 1 cup of raw cashews for at least a few hours, or overnight. Drain, add cashews to blender and add 1 cup of fresh water (not the soaking water). You can add a little vanilla and/or cinnamon if you want, but I just leave it plain. I am now suspecting some type of coconut allergy, so I am going to avoid all coconut for the next week or so (I'm on day 18). I am drinking my coffee black with just cinnamon now, but I am using the cashew cream in other recipes. It has just about the same consistency as canned coconut milk (although you could play with the amount of water to find the consistency you want), and the flavor is more neutral in my opinion. A teaspoon or so beaten into eggs for scrambling is excellent, and makes for nice fluffy scrambled eggs. I hope that is helpful! Link to comment Share on other sites More sharing options...
