My First Whole30 Log Began 4/15/15

Day 1: I decided to start sort of "last minute" so my first day choices were based on what I had, without much planning.

 

D1M1: 2 Hardboiled eggs

D1M2: Leftover chicken and carrots

D1M3: 3 sunny side up eggs, large pan of broccoli roasted in coconut oil with garlic, small handful of almonds

 

Day 2: Went to Costco and grocery store after work. Got home late but had time to cook a little and do a little prep for the next day.

 

D2M1: 3 sunny side up eggs over sauteed broccoli, onion and red bell pepper

D2M2: 1 can of tuna in olive oil mixed with olive salad over organic romaine lettuce with celery & red bell pepper. small apple

D2M3: 2 chicken thighs marinated in olive oil with fresh lemon juice & zest, garlic and fresh oregano (and of course salt & pepper). I broiled them in a preheated cast iron skillet for 5 minutes on each side. Juicy and delicious! 1 small sweet potato diced and roasted in coconut oil and roasted broccoli with garlic and lemon

 

Day 3: Busy morning, barely had time to cook breakfast and prep for lunch. Glad I made it to the store yesterday...I hope to have time to do meal prep/ some cooking this weekend to make next week easier! TGIF!

 

D3M1: 3 sunny side up eggs over sauteed broccoli, onion and red bell pepper

D3M2: leftover chicken thighs from last night over a mason jar salad (olive oil, apple cider vinegar and dried herbs on bottom with olive salad, chopped carrot, celery, red bell pepper next followed by cucumber, romaine and a few almonds. small apple.

D3M3: Crock Pot Pork Loin marinated overnight in olive oil, fresh lemon juice & zest, garlic and fresh oregano topped with a chopped onion and a little more lemon juice. Will top with a pinch of chopped mint/garlic/lemon at the table. Roasted sweet potato in coconut oil and steamed broccoli with garlic and lemon.

Day4M1: Mini meal because not enough time to cook: 2 hard boiled eggs and half a red bell pepper

Day4M2: 2 sunny side up eggs over sauteed vegs (onion broccoli and red bell pepper)

Day4M3: Mini meal at a music festival: 2 closed handfulls of almonds and 1 large piece of smoked salmon around cucumber sticks, wrapped in romaine lettuce leaves.

Day4M4: Steak and Pork Chops (not enough steak for two so I defrosted both) with roasted sweet potatoes and broccoli

 

It was interesting being at a music festival and not drinking beer. Husband had a few but it wasn't as fun since we weren't both drinking. I wish we'd had a blanket to sit down, we would have stayed longer. Instead we were standing around and it got old. Music was good but not great. Praise God I had willpower to not have a beer!!!

I revised M4D4. Had roasted brussells sprouts instead of broccoli and they were delicious. I melted coconut oil in a large cast iron skillet and added about 1-1/2 tablespoons of curry powder (compliant). Cut the ends off the brussells sprouts and halved them, put them in the skillet cut side down and roasted at 425 for about 20 minutes. They were buttery, crispy and delicious! We had 1/2 of an 11 oz. steak (each) and half of one boneless pork chop (best pork chop of your life recipe from the forums). For the ribeye I massaged a little melted coconut oil in to the steak and sprinkled with garlic salt, cayenne pepper and oregano. Placed in a heated cast iron skillet for 30 sec on each side, then into oven for 1-1/2 min on each side (broiler). mmm, I wish I could afford to have ribeye for dinner every night!

Good for you! I'm nervous about social events because a glass of wine or a beer is such a normal way for me to loosen up. I hope I have the same willpower!

I'm having hot tea or coffee right after dinner, then sometimes sparkling water with lemon and lime or just plain Kangan water. Going out Tuesday or Wednesday and it will be a test. I'll pray (seriously) for strength and I plan to order club soda with lime and sip, focusing on the conversation vs. the beverages.

D5M1: 3 eggs over roasted onion, red bell pepper, broccoli

D5M2: (snack) small handfull of almonds

D5M3: (snack) two small slices smoked salmon and a small piece of beef fat from steak last night (browned it in a pan)

D5M4: meatloaf, baked sweet potato and steamed broccoli. Topped sweet potato with a teaspoon of coconut oil and salt & pepper.

 

Got up late and was pretty lazy today. Did get some meal prep done for the week, yay me!

D6M1: egg/veggie casserole topped with 1/4 avocado

D6M2: mason jar salad (olive oil, vinegar, olive salad, carrot, celery, red bell pepper, romaine, mushrooms) topped with 2 palms smoked salmon & 1/2 avocado

D6M3: mason jar salad topped with 1 palm pork chop and 1/2 palm leftover meatloaf. 1 small apple

D7M1: breakfast casserole topped w/ 1/2 avocado, handfull of fresh strawberries

D7M2: cobb salad with plain chicken, no bacon, no cheese, no dressing

D7M3: mason jar salad with leftover meatloaf. small apple. marinated veggies

D10M2: mason jar salad dressed with olive salad, smoked salmon, small apple

D10M3: broiled chicken thighs, roasted brussells sprouts, cauliflower rice

D12M1: 3sunny side up eggs cooked in leftover steak fat. Roasted broccoli onion and red bell pepper

Oops...got up too late and only had two meals!

D12M2: baked chicken thighs, roasted cauliflower in coconut oil and curry, salad, strawberries

D14M1: 3 sunny side up eggs over roasted onion/red bell pepper/broccoli

D14MiniMeal: avocado

D14M2: Baked chicken with homemade mayo, sauteed green beans & onions

D14M3: Turkey & beef taco meat in lettuce cups, sauteed red bell pepper & onion, cauliflower rice

 

I screwed up today and forgot to eat fat with breakfast. I was really hungry about 2 hours later so I had a small avocado. I usually have avocado on my eggs but I forgot. What a difference!

D18M2: Moe's burrito bowl w/ chicken, guac, onion, bell pepper, cilantro, salsa, lettuce

D18M3: salad with beets, cukes, squash, tomato, carrot, 6oz tuna w- just salt & pepper, rice vinegar
