Cauliflower rice without ghee?

Planning to start Whole30 in 2 weeks. Trying to do some meal planning. We have a dairy allergy in my family, and I'm curious if anyone has made the cauliflower rice or mash without ghee? If so, did you add a different fat or just omit? These are two side dishes I really want to try, but don't know what to sub for the ghee. Thanks!!
