What is the point of reintroduction?

No, you don't have to reintroduce other foods.

The point of reintroduction is that for most people, there will come a time when they're in a situation where they will want or maybe need to eat something that isn't W30 compliant, and if they've done reintroductions, they then have a better idea how foods will affect them, which foods they know affect them strongly enough that they want to avoid them at all costs, or which foods they can have a little of if they choose without having much of an effect.

If you don't want to do the standard reintroduction, you might still want to read up on the slow roll reintroduction, which is more relaxed, and would only have you reintroduce something if you decided one day that you really wanted it.

The point of reintroduction is to take advantage of your very clean system to see how you react to the less healthy foods to allow you to make better choices going forward when faced with situations out of your control. What you choose to reintroduce is completely up to you and many people do a slow roll reintroduction rather than a traditional one. Personally I could care less about legumes regularly (and try to never eat soy) so I never really reintroduced them in a traditional sense but they do occasionally end up on my plate and I pay attention when they do. Once you complete the 30 days you have finished the program and how you choose to move forward is up to you. It sounds like what you really want to try is paleo baked goods? If that is the case than maybe that is what you add in on day 31 and see how it goes.

You don't have to add back any foods that you don't want to.  You're in charge and you can create your own food protocol and rules.

The purpose of reintroduction is to pinpoint food sensitivites going forward. If you're not a fan of wheat or dairy, it is your decision to leave them out.  For many with food addictions, moving slowly through a Slow Roll Reintro can buy some time to create a food strategy that won't cause further thrill or binge eating in the future.

Making smart decisions after a Whole 30 is just as important as the Whole 30.  Sugar withdrawal is miserable.  For those who've spent 30 days kicking their Sugar Dragon to the curb - reverting back to sugar immediately on Day 31 and beyond causes the same angst, internal struggles, urges towards rationalizations and then quite often, restarting another Whole 30 to get over the rough patches.

You don't have to put back anything that stirs up cravings or causes health problems.  You are in driver's seat after a Whole 30 days.
