Hot Sausage and Hickory Smokes Bacon from Butcher.... compliant?

I have officially completed my first week on my Whole30! I recently made a trip to a near by butcher that has their own farm where they raise their own livestock and sell it in their own meat market. I picked up a package of Hickory Smoked Bacon and a package of Hot Pork Sausage. Neither of the products had ingredients on the labels. There were other cased sausages, etc in the store that had a list of ingredients. I asked the girl at the counter if she knew if they added any sugar to the bacon or hot pork sausage. She did not seem to know so I went ahead and bought them anyway. I want to make a recipe tonight with the hot pork sausage that I bought, but I cannot help but wonder if there is  anything  that I shouldn't be eating in hot ground pork sausage.

 

Does anyone that is familiar with small scale meat processing know what they typically put in hot pork sausage to make it hot?! I really do not want to eat something that is not compliant. I have done so much work to get to this point and it would be silly for me to mess up like this.

 

I figured the hot flavor comes from compliant spices that they add to the meat and that the bacon was just smoked on hickory wood since there were no ingredient lists on those two products.

 

HELP!

You really can't guess, sorry!  Chances are that they will not give you the exact recipe but they really have to know about the ingredients, it's the law, they can't sell mystery food.  Call them back or go back in there and ask to see the ingredients list for each product. 

 

There could be soybean oil, wheat, rice flour, sugar in various forms etc.  You really can't guess and still be doing a Whole30, sorry.  :(

 

(My local small scale butcher offers bacon that has no sugar but his sausages have rice flour.  I never, ever would have guessed rice flour)

Don't rely on the sales clerk... ask her to check with the owner.  I bought some Hot Italian Sausage recently at my local market but only after they confirmed it is made with pork and spices only - no fillers or additives!  They KNOW what's in their food.
