mhedt
Kelp Noodles are made from: kelp (a brown seaweed), sodium alginate (a salt derived from seaweed), and water. I'm starting the Whole30 on May 18th - but the last few weeks I've been on a Paleo diet which allows Kelp noodles. Just not sure if it's allowed on the Whole30. Thanks, M
Moderators ShannonM816 Posted May 11, 2015 Moderators Share Posted May 11, 2015 They're technically okay, but be sure you're not missing out on other vegetables because you're having these. Nutritionally, zoodles, spaghetti squash, or even broccoli slaw would probably be better options to sub for your pasta in recipes.

SquirrelGirl
Shannon already said, they are technically ok. But if you think of the Whole30 as an attempt to provide your body with nutritious, healthy food, they probably don't make a lot of sense, since they don't have any nutrients nor (noteworthy amounts of) energy/calories and thus just take up valuable space in your stomach. (just my two cents)
Moderators ultrarunnergirl Posted May 11, 2015 Moderators Share Posted May 11, 2015 Nom Nom Paleo has an outstanding stirfy recipe on her iPad app that uses these with a ton of veggies. One of my favorite dishes. The kelp noodles definitely need cooking in a pan with a lot of veggies and flavors (like garlic, coconut aminos, fish sauce) infused in them. You will probably not like them as a straight sub for noodles.
