Gladys_Rabbit
I have been following a half-hearted paleo diet for a while and it has helped some of my Celiac symptoms but there's still some nagging problems that need sorted. (I've been 100 % gluten free, of course.) I am looking forward to this journey.
Gladys_Rabbit
Day one went pretty good! Eggs for breakfast and a lettuce salad with grilled salmon for lunch. Sardines and veggies for dinner. All good. We went to the farmers market and everything we saw looked Whole30 compliant. Then we went to the natural food store and nothing looked compliant. I was actually quite stunned at all the things I wasn't going to be eating. Entire aisles of no-no's. For most of my adult life I was of the mindset that said vegetarianism, especially low-fat veganism, was the best. Brown rice with tofu and vegetables was the ideal meal, I had believed for decades. Now I am having to double-think everything. Tofu is out; pork chops are in. Whole grain bread is out; bacon is in. But so far, so good.
KaraShell
Today is my first day & so far it's going good. Discovered I'm not a fan of almond butter or milk though! I've always thought a plant based diet was the best too, but I've never been able to stay on one for long. I'm really interested to see if this helps with my eczema & insomnia. I think giving up sugar is going to be the hardest thing for me!!! LOL
Gladys_Rabbit
Hello KaraShell, I like almond butter but I like cashew butter even better! After all those years of believing a plant-based diet was the epitome of food virtue, I am finding that I am having to overcome feelings of guilt when I enjoy meat. Old beliefs and habits die hard. I have eczema, too. I hope this helps. All the best to you! Gladys R.
Gladys_Rabbit
Day 3 has come and gone, as far as eating is concerned. I didn't wake up feeling too bad but then, I had been eating a quasi-paleo diet before my Whole30. My only serious change is not eating cheese and "paleofied" baked goods, which I rather enjoyed. The pain in my side is completely gone.
Gladys_Rabbit
Day 4 is done. I had to fix some macaroni and cheese from scratch for my granddaughter and I came within a micro-second of licking the spoon but I caught myself just in the nick of time! For lunch: Compliant health food store chicken sausage with broccoli and salad. And some applesauce. I know an apple is better but I didn't want to let an opened jar go to waste. Gladys_Rabbit
Day 5 is shuffling to its close. This was the most difficult day so far (although I feel terrific.) We always have a big potluck every Sunday after church. This potluck has always been the downfall of my previous dieting attempts. Even after going gluten-free there was still a lot of cheese and non-compliant meats to tempt me. But today I studied the spread and realized all I could eat was some fresh raspberries and a cup of tea. Could have been worse- the raspberries were good. So back at home, I am ranging around looking for something to eat. This is the time of the week (Sunday afternoon) when I would normally eat whatever I fancied and lots of it. Big disaster every week, diet-wise. Today I sighed, fixed a big salad, nuked a chicken thigh, and had a very enjoyable, guilt-free meal. Today was the big test. If I can resist potluck food, I can resist anything. So, a good day, all in all. Oh- a church friend told me she thought I looked like I had lost ten pounds! I haven't, of course, but it was encouraging.
Gladys_Rabbit
Day 6 is accomplished. I feel great! We were invited to a faculty BBQ but declined. I am sure all they were serving was half-burnt Costco hamburger patties and a bunch on non-compliant stuff that wouldn't have looked terribly edible even if I wasn't doing the Whole30. Instead we ate an enormous salad with chicken and some steamed veggies, topped w/ lemon dressing. I really like my spiralizer. I don't like (and can barely digest) big pieces of raw vegetables so the spiralizer really helps.
Gladys_Rabbit
Done with Day 7, an entire week. I still feel very good. I resisted spiced pecans today. (They had sugar.) My biggest temptation is to get on the scale but I pitched it so far under the bed I can't easily get to it. But I am not doing this to lose weight but to find out what food is causing the pain in my side. The pains are all gone now so I am going to have to play the scientist when it's time to reintroduce food to see if it flares up again. I am hoping it is not dairy..... Another happy day of eggs, meat and veggies.
Gladys_Rabbit
Day 8 completed. A new temptation.... I now have a car. It is very tempting to drive over to the bakery or taco stand and ..... never mind. I resisted. Today was mostly fish, eggs, vegetables and cherries, which are in season now. Cherries are my favorite fruit and their season is quite short so I have to eat 'em while I can.... in moderation, of course.
Gladys_Rabbit
Finished with days 9 and 10. The old Celiac side ache was back yesterday and I have been wracking my brain to figure out why but it was a compliant day so it's a mystery. It's gone today. I had some smoked salmon on a plate of steamed vegetables at a restaurant for lunch, very tasty. I'm roasting a turkey. That should provide enough meaty goodness for at least a week. Just add veggies!
Gladys_Rabbit
All done with eleven. Nothing remarkable to report. We began devouring the big turkey I cooked last night, very tasty. Here is a good idea for gravy: Instead of placing the turkey on a rack, place it on a bed of carrots, potatoes, onions and celery. When the turkey is done roasting, dump all the veggies and drippings into the blender along with the cooked giblets and buzz til smooth. It will be plenty thick. Adjust seasonings. This is really quite delicious and avoids all grains and flours.
Gladys_Rabbit
Done with Day Fifteen. I am feeling great. Bought a bicycle and have taken up hiking. I really enjoy eating eggs, meat and vegetables. Moping a bit over cheese, though. In the Whole30 literature it talks about dreams about eating non-compliant food and waking up feeling panicky. It happened! Press onward!
Gladys_Rabbit
I have a feeling that my Whole30 will come to an early conclusion next Thursday, after only 23 days. We have been invited to have dinner with friends whose feelings I am simply unwilling to hurt. They are not folks who would understand things like Whole30. They are gluten-free and mostly do eat meat and veggies but I suspect everything will be cooked in butter and I don't have it in me to tell them how to prepare our dinner. "I will only come if you don't put X in the food." Nope, can't do that. So we'll see.
Gladys_Rabbit
Finished Day 16. Went out and bought some hiking shoes.
Gladys_Rabbit
This is my old thread of one year ago. I had made a good start but I did quit the program because of the dinner with our friends. I am beginning again today, one year later. It's still Orthodox Lent so no meat for the next 2 weeks but I can eat eggs. For breakfast I had eggs scrambled with veggies, lunch was acorn squash, sautéed mushrooms and a pear with almond butter. Fried potatoes and another pear for dinner. I already feel better.
