I thought it would be easy to come home and find a recipe on the net, but there are surprisingly very few! Most are for butternut squash. Anyone have a simple recipe for me?? If so, you can cut it in half and steam, saute, roast or grill it. Think of it similar to zuccini, but just a different shape..or yellow summer squash, but different shape. It takes a bit longer to cook than zuc or summer squash. Now I am going to go google it to see if we're talking about the same thing. Oh, I should have googled first. Ignore what I posted. Sorry. Buttercup is a winter squash and looks similar to an acorn squash. So...you could cut it up and roast or steam it. Remove the seeds and don't eat the skin.
