Left over Dark Turkey meat?

I made a whole turkey yesterday with the though of making meals with the left over meat this week. I need some recipe ideas for dark meat that my family would like. I'm drawling a blank and I don't want to get tired of turkey this week.

Back when I was a teen and had a job as a waitress the Head Chef used to say '...if in doubt, curry it...' Now granted he was referring to the freshness of the meat, but it's a turn of phrase that has stuck with me, and if ever I have a cut of meat and I'm not sure what to do with it I do just that....

Turkey curry sounds amazing and I'm not even a huge fan of turkey.

 

I like to make shepherd's pie with leftover meat. (Technically cottage pie if it's not made with lamb.) You can vary the veggie mash that you put on top. Traditional would be white potatoes, a lot of Whole30 folk substitute mashed sweet potatoes, and I'm also a fan of mashed butternut squash. I've even seen recipes that use a combo of pumpkin and cauliflower mash with maybe an egg to help keep the layer together and to encourage browning. No reason that you couldn't also substitute turnips, rutabagas, or any other root veggie that your family likes.

 

Quiche and/or egg muffins are also kind of a go-to for leftovers. You could even do a play on egg foo yung. You don't necessarily have to use Asian flavors, but you could use the same technique of having a meat and veggie filled egg pancake.

I have been meaning to try a Whole30 twist on Turkey Tetrazzini.

 

Obviously, you need to omit any non-Whole30 ingredients.

 

Omit the peas.

Use spaghetti squash (or zucchini or squash noodles, salted and drained first) in place of noodles

Use coconut cream (just chill the can a few hours and skim off the thick stuff to use) in place of dairy/milk

Use bone broth in place of wine.

Sprinkle the top with almond meal.

 

There are several paleo-friendly recipes you can find if you google paleo tetrazzini. I didn't want to link to them as none are compliant as written.

Mmmm turkey tacos! Finely chop up your cooked turkey meat and heat in a bit of bone broth or water with homemade taco seasoning until warm and moist. Have over lettuce with desired taco toppings or in a lettuce leaf 'taco'. You could also use the taco turkey meat in a egg bake for breakfast.
